How To make Milky Way Layer Cake
8 lg Milky way candy bars
2 c Sugar
1/2 ts Baking soda
2 1/2 c Sifted flour
2 c Butter or margarine
4 Eggs
1 1/4 c Buttermilk
2 c Chopped nuts
Grease two 9 inch layer cake pans or one 9 x 12 pan. Preheat oven to 325 deg f. Combine candy bars and 1 cup butter in a double boiler and melt over hot, but not boiling water, until melted. Set aside. Cream together the remaining butter and sugar, until light and creamy. Add eggs, one at at time, beating well between each addition. Dissolve soda in buttermilk and add to creamed mixture, alternately with flour. Add melted candy and blend until smooth. Spoon batter into prepared pan(s).Bake for 50 to 60 minutes in 9 x 12 pan or 40 to 50 minutes in layer pans.Cake should spring back when lightly touched. Frost as desired.

This better than bakery sponge cake recipe is light, airy, and just straight up DELICIOUS! It’s so versatile that you can pair it with literally anything. I love filling mine like a classic Victorian sponge cake with my homemade raspberry filling recipe and whipped cream – YUM!
HOW TO WHIP EGGS:
INGREDIENTS:
Sponge Cake
- ⅓ cup (40 g) flour - regular, all purpose (see note 1 on blog post)
- ½ cup (60 g) cornstarch
- ¼ tsp baking powder
- ¼ tsp salt
- 4 large eggs - whites and yolks separated
- ⅛ tsp white vinegar
- ⅔ cup (132 g) white granulated sugar - separated in half (1/3 for the egg whites & 1/3 for the egg yolk mixture)
- 1½ tbsp warm water - not boiling
- 2 tsp vanilla essence/extract
- 2 tbsp (30 g) unflavoured vegetable oil - I use canola
IMPORTANT: Cake tins must be ungreased (with only the bottom lined), and ensure the cakes are cooled upside down once baked. Bake at 160 °C (320°F) with the fan on for 25 minutes. If your oven doesn't have a fan option, then you will need to increase the baking temperature to 175°C (347°F).
Simple Syrup (I use about 3/4s of the quantity below to brush the cake)
- ½ cup (100 g) white granulated sugar
- ½ cup (110 g) boiling water
Whipping Cream
- 2 cups (375 g) cold whipping cream
- 2 tsp icing sugar - also known as confectioners sugar/powdered sugar
- ½ tsp vanilla essence/extract
- 1 punnet fresh strawberries for decorating - sliced in half

This will make a great Christmas cake! Found the recipe in Sarah Addison Allen's book, The Girl Who Chased the Moon.
MILKY WAY CAKE
INGREDIENTS
8 Milky Way candy bars
2 sticks butter
2 cups granulated sugar
4 eggs, well beaten
1/2 tsp baking soda
2-1/2 cups flour
1-1/4 cups buttermilk
1 cup pecans, chopped
1. Melt candy bars in 1 stick of butter.
2. Cream sugar and the other stick of butter.
3. Add eggs, baking soda, and flour alternately with buttermilk.
4. Add melted candy mixture and pecans.
5. Bake in 3 (9-inch) pans, greased, at 325º for 30-40 minutes or until done.
6. Cool for 5 minutes, remove from pans, and cool on rack.
CHOCOLATE ICING
INGREDIENTS
2-1/2 cups sugar
1 cup evaporated milk
1 stick butter
6 oz. chocolate chips
1 cup marshmallow creme
1. Mix sugar and milk over low heat. Cook until it reaches a soft ball stage.
2. Add other ingredients. Stir until chocolate chips are melted.
3. Remove from heat and beat until cool.

INGREDIENTS:
2 eggs
Beat for 1 mins
Sugar 1/2 cup
Beat until foamy consistency
Oil 1/4 cup
All purpose flour 1 cup
Baking powder 1 tsp
Add gradually
Keep aside
Milk 1/2 cup
Butter 1 tbsp
Bring it to a boil
Turn off the flame
Vanilla 1 tsp
Mix well
Add hot milk into cake batter
Mix slowly
7 inch greased pan
Bake in preheated oven at 180c for 30-40 mins
NOTE: 1 CUP = 250 ML
