How To make Minced Meat Kabobs
1 lb Ground round
1/2 c Rice - cooked
1 tb Onion - minced
1 tb Fresh parsley - minced
1 tb Fresh mint - minced
1 ts Salt
1/8 ts Ground allspice
1/8 ts Ground cinnamon
1/4 ts Ground pepper - fresh
3 sm Zucchini - cut into 1 inch
1 Red bell pepper - cut into
-1 inch 2 tb Olive oil - good quality
1 tb Lemon juice
1 ts Fresh mint - minced
In a large bowl, combine the first 9 ingredients and mix vigorously with your hands until smooth (5 to 6 minutes). Shape into about a dozen meatballs. Thread them onto 4 skewers, alternating with the zucchini and red pepper. Preheat the oven to broil. In a glass jar, combine the olive oil, lemon juice, and the 1 teaspoon of mint; cover and shake well. Brish the kabobs with the oil mixture and broil 4 inches from heat; turn the kabobs occasionally and brish with the remaining oil mixture until meatballs are brown (about 10 to 12 minutes). 1 1/2 pounds Certified Angus Beef ® ground beef (80 or 85% lean)
8 (12-inch) wooden skewers, soaked in water
1 teaspoon coarse kosher salt
1/2 teaspoon ground white pepper
1/2 teaspoon red pepper flakes
1/4 teaspoon cinnamon
1/4 teaspoon ground clove
1/4 teaspoon ground coriander
1/4 teaspoon ground ginger
1/4 teaspoon nutmeg
1/2 red onion, finely chopped
1/4 cup finely chopped fresh parsley
1 tablespoon finely chopped fresh mint

——ingredients——
2 pounds of ground beef (88% lean / 12% fat)
1 medium onion
2 cloves of garlic
1 jalapeños
1 red bell pepper
Parsley a hand full (about 1/2 a bunch)
2 tablespoons pepper paste
1 tablespoon salt
1 teaspoon black pepper
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon paprika
1/2 teaspoon turmeric

1. Preheat your oven to 425°
2. In a food processor mince the onion, garlic, jalapeños, bell pepper and parsley. Then add the mixture to the ground beef.
3. Next add the pepper paste and all the seasonings, give it a good mix until everything is well combined.
4. Next take about 2 to 3 tablespoons of the meat mixture depending on the size of kebab you want to make and shape it into little footballs (make sure you don’t make them too thin or too small because they will dry out in the oven)
5. Once all shaped put them in a tray lined with parchment paper, add some tomato all around and into the oven they go for 20 minutes. You can broil them for that last minute to give them that chard look. Once out of the oven serve them with rice, in a pita wrap or with a salad.

Baalbek, Lebanon - Welcome to Baalbek, Lebanon, one of the world’s most ancient cities. I was excited to visit, and before we toured the ancient ruins of Baalbek, we went on a street food tour. The first place Kamel and Fadi took me was a small butcher shop that specialized in not only raw fresh meat, but kebabs and kofta kebabs, and preparing meat to go into a special pastry from Baalbek. After eating the amazing pastries - which unfortunately didn’t make today - we then had some of the best freshly grilled kofta kebabs I’ve ever had. And so in this video we’ll learn to make Lebanese street food kofta kebabs!
First let me mention to you this was my first time to ever make this kofta kebab recipe, and more importantly my first time to form kebabs on skewers. Let me tell you, they make it look much easier than it is. To form minced meat onto a metal sword like skewer can take a lifetime of practice and it’s challenging to get the perfect consistency, evenness, and form. But luckily it turned out pretty well.
Ok, here are all the ingredients you’ll need to make this Lebanese street food kofta recipe. And this list of ingredients is just a guide, not exact. You can increase or decrease depending on your taste and feel.
For the kofta kebabs:
1 White onion
100 g. Flat leaf parsley
1 kg. Ground lamb (or beef)
½ teaspoon Lebanese Seven Spice mixture
1 teaspoon Black pepper
Salt - to taste
Dry chili (I used cayenne) - to taste
For the parsley salad:
100 g. Flat leaf parsley
1 White onion
2 Tomatoes
1 teaspoon Sumac
½ Lemon juice
Salt - to taste
Extras:
Tomatoes and onions to roast, pita bread to eat with entire meal
