Dinosaur Beef Ribs with Molasses Glaze on the Pit Barrel Cooker
Today I’ve got some 2 inch Dinosaur Beef Ribs that we’re going to smoke on the Pit Barrel Cooker and finish with a Molasses glaze. That’s right, thick beef ribs and molasses!
Beef Ribs Ingredients
• 4 pounds thick beef ribs
• 8 teaspoons brown sugar
• 2 tablespoons Virginia Coastal Steak rub, see here (or you can substitute 2 tablespoons Kosher salt)
• 1 tablespoon black pepper
• ½ teaspoon garlic powder
• ½ teaspoon smoked paprika
• ½ teaspoon olive oil
Glaze Ingredients
• 1 cup molasses
• 1 cup apple cider vinegar
• 1 tablespoon black pepper
Recipe Instructions
1. Mix all of the dry seasonings together.
2. Remove the rib membrane from the back of the beef ribs.
3. Apply the olive oil to the ribs as a binder.
4. Apply the dry seasoning mix on the ribs.
5. Preheat the Pit Barrel Cooker and add some hickory wood chunks.
6. Hang the beef ribs in the Pit Barrel Cooker.
7. To make the molasses glaze, add the apple cider vinegar, molasses and black pepper to a sauce pan over medium high heat and bring to a simmer until reduced by half (15 to 25 minutes).
8. Start glazing the ribs when they reach 185-190 degrees F and cook the ribs until they reach an internal temperature of 200-202 degrees F.
9. Total cook time for these beef ribs was about 7.5 hours (approximately).

INGREDIENTS
FOR THE RIBS
4racks baby back ribs
1 1/2cups apple cider vinegar
cherry and oak wood chips, for smoking
FOR THE DRY RUB
1/3cup brown sugar
3tablespoons salt
1 1/2teaspoons chipotle powder
2teaspoons onion powder
2teaspoons paprika
FOR THE CHIPOTLE-MOLASSES BBQ SAUCE
3tablespoons tomato paste
1/4cup tomato sauce
3/4cup white vinegar
1/2cup molasses
2chipotle peppers in adobo sauce, minced
1tablespoon dry rub
juice from 1 lemon wedge
DIRECTIONS

Preheat your smoker to 225°F.

With a butter knife and paper towels, Insert butter knife under rib rack membrane and a bone. Lift knife to separate membrane from bone, grip membrane with paper towels and pull off ribs until completely removed.

Combine dry rub ingredients in a bowl and mix with fingers until lump-free. Apply rub to both sides of each rib rack.

Place cherry and oak wood chips in smoke box and ribs in smoker. Cook for 3 hours at 225°F.
HOT TIP: Occasionally spray ribs with apple cider vinegar to keep moist.

Wrap ribs in aluminum foil and cook for 2 more hours at 225°F.

In a saucepan, combine all Chipotle Molasses BBQ Sauce ingredients and simmer for 10 minutes.

Remove the ribs from aluminum foil and coat generously with barbecue sauce. Let smoker reach 300°F, uncover ribs, place back in smoker and and for 1 more hour.

Remove ribs from your smoker and let rest for 15 minutes before serving.

This recipe uses fresh ingredients and rich molasses to create a zesty and sweet steak. When using fresh garlic, peel it and smash each clove with the side of a knife blade to awaken the flavor of the root, then dice it into ¼” chunks. Peel the ginger root and chop it into small chunks like the garlic. In a bowl, mix the marinade of brown sugar, chile powder, rice vinegar, molasses, garlic, and ginger. Place the flank steak in a re-sealable bag and pour the marinade into the bag. Seal it and massage the marinade into the steak. Place it in the fridge and marinate for up to 2 hours. Marinating will break down the meat fibers and tenderize it while infusing the flavorful steak marinade into the hanger steak. Remove the meat from the bag and keep any garlic and ginger that sticks to the steak on, it will cook into the skirt steak. Place the meat directly on the grill grate and smoke for 30 minutes to one hour. Tri tip cooks fast and only needs about 5 minutes of high heat grilling per side. To ensure the tri tip remains tender and pink inside, the internal temperature should only reach 130 dBBegrees F. Remove the steak from the grill, it will be dark and rich with flavor, let it rest for a few minutes, then slice it against the grain into ½” thick cuts and sprinkle with a pinch of Jacobsen Salt for flavor. Try a Wagyu tri tip for this recipe, tri tip is great on crispy bread for an appetizer, cut thick for a tri tip sandwich, and delicious with a smear of horseradish as a main dish.
