Angelo's Mom Makes Walnut Cake - Carla Hall's Recipe
My mom wore her special Tim and Eric peace shirt to make this walnut cake from The Chew's Carla Hall (my mom loves her and thinks she's a genius). Here's the recipe:
The cake had a very nice sour flavor mixed with the sweetness, due to the buttermilk. The orange zest also mixed in nicely. I think I may prefer that to totally sweet cakes and even though I only had a small piece (I'm still trying to get my cholesterol down) I remember the flavor strongly, which is usually only true of foods I really like or really hate.
My mom talked about how she's exercising now (after I've pushed her to for years). She's finally losing weight and we'll resume her weight loss series soon! And still doesn't know how to say powdered sugar. She says sugar powder. When I correct her she says, potted sugar.

Classic Coffee & Walnut Cake Recipe | Cupcake Jemma Channel
How we have gone this long without sharing this classic recipe for Coffee & Walnut cake we don't quite know! But alas, here it is in all its perfectly simple glory; layers of coffee and walnut sponge filled and decorated with coffee buttercream and topped off with more walnuts. This is a perfect tea time cake and we guarantee you will absolutely love it.

Preheat Oven to 170C fan assisted (190C non fan)
For the 3 layer 7 cake that Sally makes in the video:

250g Softened Unsalted Butter
250g Caster Sugar
4 Eggs
250g Self Raising Flour
50g Chopped Walnuts
3tbsp cold good quality Espresso (or 1tbsp instant coffee granules mixed with 3tbsp water)
Coffee Buttercream:
250g softened Unsalted Butter
400g Icing Sugar
3-4 tbsp cold good quality Espresso (or 1tbsp instant coffee granules mixed with 4tbsp water)
Walnuts to decorate!

For 2 layers of 6 sponge:
125g Softened Unsalted Butter
125g Caster Sugar
2 Eggs
125g Self Raising Flour
25g Chopped Walnuts
1.5tbsp cold good quality Espresso (or 0.5tbsp instant coffee granules mixed with 1.5tbsp water)
Coffee Buttercream:
125g softened Unsalted Butter
200g Icing Sugar
1-2 tbsp cold good quality Espresso (or 1/2tbsp instant coffee granules mixed with 2tbsp water)

Mom's Dates Cake | Mom-n-law's Caramalised Sugar Cake | Easy Dates Cake | Christmas Special
Hi,
It’s celebration time all around the world. Wishing you all Merry Christmas. On this occasion, showing out three cake recipes, one by me, and the other two by my mother and mother-in-law. My mother-in-law prepares in a pressure cooker in a different way, so thought of sharing this method. My mother made it in the much traditional way which is not easy for the new generation, but it could also be done over the gas stove. Just showing how cakes used to be made earlier in the traditional oven. Here my mother has used Pressure cooker to get a thick vessel for the cake not to get burnt. You can use any other thick vessel too.

MY DATES CAKE ( No Eggs, No sugar, No Oven, No Beater) :
1. Dates - 15 - 25 ( As per your sweetness )
2. Milk - 1 cup for boiling dates + 1/2 cup while blending
3. Wheat flour - 1/2 cup
4. Maida - 1/2 cup
5. Baking powder - 1 tsp
6. Baking soda - 1/2 tsp
7. Salt - a pinch
8. Cinnamon powder - 1 tsp
9. Cardamom powder - 1/2 tsp
10. Oil - 1/2 cup
11. Raisins - a handful dusted with some flour

MOTHER-in-law’s CARAMALISED SUGAR CAKE
Measurment for 1 cake
My cup measurement is 200 ml cup
All purpose flour - 200ml
Oil/Butter/Ghee - 200ml
Sugar - 200ml
Eggs - 5
Vanilla essence - 1 tsp
Baking soda - a pinch or two
Cashews & raisins roasted in ghee - a handful
Caramalised sugar syrup -
Sugar crystals - 2 - 3 spoons
Water - 5 - 6 tbsp

MOTHER’S DATES CAKE
Dates - 1 - 1.5 cup deseeded
Baking soda - 1 tsp
Hot boiling water - 1.25 cup
Oil - 1/2 cup
Sugar - 1 cup
Egg - 1
Vanilla essence - 1 tsp
All purpose flour - 1.5 cup
Baking powder - 1 tsp
Salt - 1/2 tsp

Classic Southern Nut Cake

Ingredients
1 C butter
2 C sugar
4 eggs
3 C self-rising flour
1 Tbsp baking powder
1 tsp salt
1 C milk
1 tsp vanilla extract
1 C coconut
1 C black walnuts, chopped
1 C pecans, chopped
Directions
Cream butter, add sugar, beat medium speed. Add eggs, combine flour, baking powder, and salt. Add to mixture alternating with milk. After all the above is mixed well, add coconut and nuts to the mixture. Pour batter in 3 greased and floured 9 pans. Bake at 350°F for 25 to 30 minutes. Cool and spread with icing.
Icing
2 C sugar
2 C butter
2 C Carnation milk
2 C coconut
2 C chopped pecans
2 C black walnuts, chopped
Directions
Cream sugar and butter. Add 2 cups milk and cook for about 8 minutes stirring constantly. This needs to reach about 212 degrees on a candy thermometer. Do not cook too much or it will not spread very well. Remove from heat and add coconut and nuts. Spread before it cools.
This recipe has been in my family for over 100 years. My family had this recipe every Christmas. The children were responsible for harvesting, cracking, and picking out walnuts and pecans. We used wooden blocks and a hammer to crack the walnut shells. As a child, I remember them being very hard to crack.

Ingredients:
walnuts - 250 g (8.8 oz)
IN THE OVEN 180 °C (356 °F)/15 minutes
for the cake top
flour - 110 g (4 oz)
vanilla essence - 10 ml (0.34 fl oz)
salt - 10 g (0.35 oz)
lemon juice - 15 ml (1 tbsp)
sugar - 100 g (3.5 oz)
egg whites - 8 pieces
walnuts - 150 g (1.76 oz)
IN THE OVEN 180 °C (356 °F)/20 minutes
for the cream
yolks - 8 pieces
sugar - 120 g (4.23 oz)
milk - 150 ml (5.07 fl oz)
starch - 20 g (0.7 oz)
flour - 20 g (0.7 oz)
vanilla essence - 10 ml (0.34 fl oz)
IN THE FRIDGE 1 H
butter - 200 g (7 oz)
walnuts - 350 g (1.76 oz)
sugar - 200 g (7 oz)
Caramelize the walnuts with sugar for 15 min
Divide them into 2 parts
1. for the cream - 175 g (6.18 oz)
2. for decoration - 175 g (6.18 oz)
white chocolate - 50 g (1.76 oz)
