How To make Mushroom Miso Cornucopia
2 c Finely diced onions
2 c Whole button mushrooms
-OR- medium mushrooms 2 tb Regular sesame oil
-OR- oil of your choice 1 ts Salt (optional)
1/2 ts Ground black pepper (opt.)
1 ts Tarragon leaves
2 c Flaked Seitan*
2 c Fresh brussel sprouts
-- (stems cut off & halved) 3 c Miso sauce
Yield: Four 1 cup portions Prep time: 20 to 25 minutes Saute vegetables and Seitan in oil with spices at medium heat for about 5 minutes. Add miso sauce and continue to cook until hot. Serve as is, or over grain, pasta or toast for breakfast. This dish has a mild, sweet taste with a hint of tarragon. *NOTE: The word "flaked" refers to a style of cut in which the food medium is thinly sliced at a 45 degree angle. “My name is Patricia Fortner. I was born in a small border town in Canada and spent many years living in Toronto. My Father influenced us to eat any type of food offered from people from other cultures or countries thus I learned to experiment with and appreciate tastes of international wine and foods. I adore traveling, experiencing other cultures and capture my experiences in photographs.
In the late 80’s I worked for a number of months near Paris, France on an academic exchange and ate a cornucopia of cheeses, chocolate, patisseries and specialties from local markets and shops . When working at a Pediatric hospital in Toronto I met and married a Korean born Brazilian man and moved to Sao Paulo, Brazil where we lived for 12 years. While living in sub-tropical Sao Paulo I learned to bargain for an abundance of exotic fruits and vegetables in the local street markets. I took every opportunity to try culinary specialties from a variety of regions of Brazil. I learned a number of recipes from my Korean/Brazilian family.
I moved to the United States in 2004 and after living in New Jersey and Virginia, I now live in front of a lake near Charlotte, North Carolina. I have a few Southern cookbooks so during the pandemic am learning some of the tricks of Southern cooks to make barbecued and smoked poultry, using local ingredients such as sweet potatoes, shrimp, cornmeal in black cast iron frypans to extract the flavors.
I plan to make a Korean tofu appetizer as well as a vegetarian soup that is quick and easy to make from ingredients from your refrigerator. Cooking is my relaxation therapy and as I work from home, I leverage my flexible time to try dishes recipes from all over the world. I appreciate Amoo’s attitude in collecting friends from all corners of the world to share special and diverse dishes that open our culinary horizons.”❤️????
