Greek White Bean Soup in 30 Minutes! Delicious Fasolada
Fasolada is a classic Greek white bean soup that usually takes over an hour to make. This quick, 30-minute version still has all of that Greek flavor and heartiness of the original. Make a double batch of this because it freezes beautifully.
Printable Recipe:
Ingredients
1/4-1/3 cup olive oil
3 carrots, diced
2-3 celery stalks, diced
1 onion, finely chopped
5-6 garlic cloves, chopped
1 (28-ounce) can crushed tomatoes
1/4-1/2 teaspoon granulated sugar
2 (15-ounce) cans of cooked white beans: navy, Great northern, or cannellini
salt and black pepper to taste
1/4 teaspoon crushed red pepper flakes or to taste
1 teaspoon dried oregano
6-8 cups vegetable broth or water
1/4 cup finely chopped fresh parsley
Serve with: toasted bread, olives, and feta cheese
Instructions
Place the chopped onion, celery, carrots, and garlic in a pot and add the olive oil. Season with a pinch of salt and cook over medium heat for 10-12 minutes or until the vegetables are soft and golden.
Add the crushed tomatoes and the sugar and all of the seasonings.
Drain and rinse the beans and add them to the pot.
Add enough water/broth to cover the beans by an inch and bring to a boil.
Reduce the heat to medium and cook for 15 minutes.
Taste and adjust seasonings if needed.
Add the parsley and stir.
Serve with toasted bread, feta, and olives. Enjoy!
Notes
Freezer Instructions: Once the soup has cooled completely, transfer to freezer-safe containers. Do not fill the containers more than 3/4 of the way as the soup will expand in the freezer.
Freeze up to 3 months. Thaw overnight in the refrigerator before serving and then warm through in a pot. Add some more broth or water if needed and serve.

Spicy Navy Bean and Black Eyed Pea Soup | By: What Chelsea Eats
Spicy Navy Bean and Black Eyed Pea Soup
A little over a cup of dry navy beans and black-eyed pea mix (I did not soak my beans)
1 can of diced tomatoes - I used organic
1 rounded teaspoon of garlic - I used prepared garlic
1 can of refried beans - I used black refried beans
1 rounded teaspoon of better than bouillon - you can use whatever healthy vegetable bouillon you would like
1/4 teaspoon of crushed red pepper optional
1/2 to 1 teaspoon of onion powder
1 rounded teaspoon of dried parsley
1 rounded teaspoon of coriander or cumin
1/2 of a large onion - any variety chopped
8 shakes of hot sauce optional
pepper to taste
I didn't need salt but add salt if you need or want it
Add 1 to 2 cups of water plus more if you would like
Add all ingredients to an instant pot or regular pot. Stir. Set the instant pot on the bean setting. My soup cooked for 40 minutes. If you are cooking this on top of the stove bring your soup to a boil and simmer for an hour to an hour and a half. Add water as needed when cooking on top of the stove.

Healthy and Flavorful: This Turkish Stew Recipe is a Must-Try
If you are looking for an easy, nutritious and tasty one-pot dish, search no more! Green beans are the main ingredient in this Turkish stew recipe and, as we all know, green beans have many health benefits. The dish is named Etli Taze Fasulye which translates to Meaty Green Beans.
I am very happy that I discovered this healthy one-pot recipe, for it is easy-to-make and tastes really good. So, what are you waiting for? Give this green beans recipe a go and enjoy!
INGREDIENTS
- 1tbsp extra virgin olive oil
- 500g green beans
- 250g minced beef (15% fat)
- medium size onion
- 25g tomato paste
- 1 tsp cayenne pepper
[- I also add 2 tsp cumin powder nowadays]
- 1 tsp salt
- 200g canned crushed tomatoes
- 300g waxy potatoes
- 2-3 garlic cloves
- 1 tsp freshly ground black pepper
[- add 1-2 big bay leaves for a deeper flavor profile]
METHOD
1. Saute meat and onions for 3 minutes over medium heat
2. Add tomato paste and saute together for 1-2 minutes
3. Add salt and cayenne pepper, wake it up for 30 seconds
4. Add crushed tomatoes 200g and saute together 1 minute
5. Add green beans and saute for 5 min, mix every 2 minutes
6. Add chopped potatoes and finely sliced garlic and mix well
7. Pour in hot water and cover all vegetables
8. Cook till potatoes are cooked, around 20 minutes, mix occasionally and add water, if necessary
9. Final seasoning to taste with freshly ground black pepper and more salt, if needed
10. Turn off and let sit for at least 15 minutes, for the flavors to unite
NOTES:
- Don't use mealy potatoes, as they become sandy and disturb the consistency of the stew
- Turks like their green beans rather soft, not crispy, even if that means, that it will lose its bright green color. Me personally prefer them in between, 30 min cooking max.
- Add a bit more water, if you wish and dip your freshly toasted bread into your green bean stew
Bon appétit!
