How To make Norwegian Meat Salad
1 c Julienne strips of cooked
Beef, veal, or lamb 1 c Julienne strips of baked or
Boiled ham 1 tb Minced onion
6 tb Salad oil
2 tb Cider vinegar
1/2 ts Pepper
1 ts Minced parsley
1/4 c Heavy cream or sour cream
1 Hard boiled egg, sliced
1 Boiled or pickled beet,
Sliced Mix cut meats with onion. Beat together oil, vinegar, pepper and parsley. Stir cream into dressing. Mix with meats combining lightly. Garnish with sliced egg and beet. Served as a main dish salad.

2 heads (680 grams) broccoli about 1½ pounds; cut into small florets and stem chopped into small pieces
½ red onion finely chopped
½ cup (50 grams) dried cranberries
¼ cup (35 grams) almonds chopped and toasted
¼ cup (35 grams) seeds sunflower or pumpkin; toasted
½ cup (70 grams) sun-dried tomatoes in oil optional; chopped

½ cup (120 grams) vegan mayo or your favorite mayonnaise

We recommend using a homemade mayo, but you can use a store bought version if you’re in a hurry.
