Cranberry Oatmeal Cookies
3 eggs
1 to 2 tsp vanilla
1 1/2 cup cranberries
2 sticks of butter
1 cup granulated sugar
1 cup brown sugar
2 1/2 cups AP flour
2 tsp baking soda
2 tsp cinnamon
2 cups oatmeal
In a bowl mix eggs and vanilla add cranberries and soak in egg mixture for 1 hour.
Preheat oven to 350° and prepare pans with parchment paper or silpat.
In a separate bowl mix flour, soda and cinnamon together.
In a mixer cream butter and sugar together. Add flour mixture and then oatmeal and mix. Add in cranberry egg mixture and mix until combined.
Scoop onto pans by tablespoons and bake for 10 to 12 minute depending on your oven. Allow to cool slightly before moving

7 Ingredient Epic Vegan Cookie Recipe!
We were craving something crunchy, chocolatey, sweet & moreish so we developed these little guys.
If you do decide to make them, we can safely say, you will absoluetly love them. Be careful though, when we say they're moreish, they really are! x
Ingredients:
About 25 salted crackers (like Ritz)
2 cups dairy free butter
2 tbsp water
2 cups soft brown sugar
Pinch of salt
1 tsp vanilla extract
Melted dark chocolate (about 1 bar’s worth)
Method:
1 Line a baking tray with baking paper, then lay out the salted crackers to form a base.
2 Melt the dairy free butter in a pan until liquified, then mix in the water, sugar, salt and vanilla. Cook and stir continuously for about 10 minutes until the caramel is thick and golden.
3 Pour the caramel over the crackers, and bake for about 10 minutes at 180℃ (356℉), which will allow it to soak and set into the crackers.
4 Once the caramel is cool, pour the melted dark chocolate over and spread so the whole thing is coated.
5 Chill until solid, then break into pieces
6 Try your best not to eat them all in one go

Chocolate Toffee Cookies
1 cup all purpose flour
1/4 cup baking cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) butter or margarine, softened
6 tablespoons granulated sugar
6 tablespoons packed brown sugar
1/2 teaspoon vanilla extract
1 egg
1 1/3 cups (8 oz pkg.) Heath Bits o’ Brickle Toffee Bits
Heat oven to 375. Line baking sheet with parchment paper.
Stir together flour, cocoa, baking soda, and salt. Beat butter, sugar, brown sugar, and vanilla in a large bowl on medium speed of mixer until creamy. Add egg; beat well. Gradually add flour mixture, beating well. Stir in toffee bits. Refrigerate dough 1 hour or until easy to handle. Drop by rounded teaspoons into prepared cookie sheet.
Bake 8 to 10 minutes or until set. Cool slightly; remove from cookie sheets to wire rack. Cool Completely. Makes about 3 1/2 dozen cookies.
