Healthy Oatmeal Carrot Cake (No Flour Cake)
You'd never guess that this deeply moist and uber-rich oat flour carrot cake with notes of cinnamon, nutmeg, and ginger is made with no refined flour

✨Ingredients✨
For the Cake:
2.5 cups (315 g) oat flour
2 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
2/3 cup (100 g) brown sugar
1/2 cup (125 g) milk
1 cup (250 g) apple sauce
1/2 cup (115 g) melted butter
2 cups (300 g) grated carrots
4 medium eggs
1 cup (75 g)walnuts or pecan
1/2 cup (60 g) raisins
For the cream cheese frosting:
400 g cream cheese, cold
100 g heavy cream 30% fat, cold
60 g honey
????????Instructions:
????Preheat oven to 350F (176 C). Line two 7-9 inch round cake pans with parchment paper and grease with butter and dust slightly with oat flour.
✅Combine all the dry ingredients in a large bowl (oat flour, baking powder, baking soda, salt, cinnamon, nutmeg, ground ginger.)
✅Combine wet ingredients (sugar, apple sauce, melted butter, milk, and eggs) in another medium bowl until sugar dissolved
✅Add wet ingredients to dry ingredients and mix until thoroughly combined. Let the mixture stand for 10 minutes, add in walnuts, shredded carrots, and raisins. Divide mixture evenly between the two cake pans. flatten the top.
????Bake for 50 - 60 minutes or until fully set (an inserted toothpick comes out clean.)
✅Let cool entirely on a cooling rack (the parchment paper will make it easier to turn the pan over on the cooling rack and let the cake come out onto the cooling rack.)
✅For the frosting whip all ingredients until combined and thickened
✅Frost one cake, layer the next one on top, and finish frosting, using a spoon create large “swooshes” in the frosting.

Although US volume measurements have been included for your convenience, it is highly encouraged that you weigh your ingredients using a kitchen scale to get the best possible results. Due to the sensitive nature of baking, kitchen scales are proven to yield more accurate and consistent results than measuring cups. Enjoy!

Simple and easy CARROT COOKIES. These carrot cookies are a family favorite cookie recipe that we enjoy any time of the year but they especially make for a perfect Easter / Springtime treat.
Ingredients:
1.5 cup old-fashioned oats

Today I'm going to show you how to make healthy carrot cake.

Here's what I cover in this video:
First, we're going to make the cake batter. It's simple and quick to make, you just have to combine dry and wet ingredients, and bake it in the oven.
Carrots work well in desserts, and thanks to the carrots this oatmeal cake is naturally sweet and moist.
Enjoy this carrot cake for breakfast, snack or even dessert.
I like to top mine with orange cream cheese frosting. Just mix together 1/2 cup cream cheese, 1 tbsp maple syrup and 3 tbsp orange juice. You will love it with this healthy cake.
Also you can drizzle it with some honey or melted dark chocolate.

OATMEAL CARROT CAKE RECIPE
Ingredients:
1.5 cups ground oats (or oat flour) (150g)
1 cup quick oats (90g)
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
2 cups carrot, finely grated (200g)
2 eggs
1/2 cup honey (170g)
1/2 cup melted butter (120g)
1 cup Greek yogurt (285g)
1 tsp vanilla
1/2 cup chopped walnuts (65g)
Preparation:
In a bowl, combine wet ingredients, eggs, honey, Greek yogurt, vanilla and melted butter.
In a separate bowl, grate the carrots and incorporate into the egg mixture.
In another bowl, combine together the dry ingredients, ground oats, quick oats, baking powder, baking soda and cinnamon. Pour dry ingredients into the wet ingredients, mixing together to combine.
Pour into prepared baking dish 8 by 8 inch, smooth the top and bake at 350F (180C) degrees for 35 minutes.
Let it cool completely in the pan, then remove to the cutting board and cut in desired shapes.
Serve with cream cheese, melted dark chocolate or honey.

10 g coconut flour(or oat flour) / 1 1/4 tbsp
5 g baking powder / 1 tsp
1/2 teaspoon cinnamon
2 medium eggs
35 g sweetener(stevia/or your choice) / 2 3/4 tbsp
15 g melted butter(or coconut oil) / 1 tbsp
1 apple
1 medium carrot
30 g chopped walnuts / 4 tbsp
18 x 13 cm / 7 x 5 inches baking tray
decorate with nuts
bake 35 minutes at 180°C/ 360°F
