1 cup unsalted butter 3/4 cup granulated sugar 3/4 cup brown sugar 2 eggs 1 teaspoon pure vanilla extract 1 1/2 cups flour 1/2 teaspoon salt 1 teaspoon baking soda 1 teaspoon cinnamon 1/2 teaspoon nutmeg 1/4 teaspoon cardamon 3 cups rolled oats 1 cup dried cranberries (or other dried fruit) Preheat oven to 350 degrees. Cream butter and sugars until fluffy. Add eggs and vanilla. Combine dry ingredients. Add to butter mixture and stir until well blended. Add dried cranberries. Drop by teaspoonful onto parchment covered baking sheet. Bake about 10 to 12 minutes, or until lightly golden. Cool.

Directions:
1. In one bowl, whisk together the oats, flour, and baking soda. Set aside. 2. In another bowl, cream together the sugar and butter until light and fluffy. Add the egg and mix until well combined. Add the dry ingredients to the creamed mixture in two additions, mixing well after each. Fold in the dried cranberries. 3. Measure the batter for each cookie using a round teaspoon and place on a lined baking sheet. Bake at 375°F for 10 minutes or until cookies are golden brown. Let cool completely on a wire rack.

Materials Used Mixing bowls: Spatula: Whisk: Non Stick Spray:
Ingredients 2 1/2 cups of oats 1 cup of dried cranberries 1 cup walnut pieces 1 1/2 cups of flour 1 tsp of baking soda 1/2 tsp of salt 1 tsp of cinnamon 1/2 cup of butter unsalted 2 eggs 3/4 cup of brown sugar 1/2 cup of sugar 2 tsp of vanilla
1. Heat oven to 375 degrees F. Line baking sheets with parchment 2. combine the butter and the sugars. Beat until light and fluffy. Add in the eggs, one at a time, beating well between additions. 3. Add in pure vanilla extract and beat for 2 to 3 minutes. 4. In small bowl, combine flour, salt, baking soda, and baking powder. 5. Slowly beat flour mixture into wet ingredients. Add in oats and stir to combine. 6. Stir in dried cranberries and walnuts. 7. With cookie scoop, portion onto prepared baking sheets. (or scoop out by a rounded TBS) leaving at least 2 between mounds of dough. 8. Bake in oven for 8 - 10 minutes, or until cookies are starting to become golden brown. Remove from oven and let set for 1 to 2 minutes before removing from pan to cool on rack. Cookies should be slightly undercooked to maintain chewiness
