How To make Old Fashioned Caramels
2 1/2 T Butter
2 c Brown sugar
2 T Molasses
1/2 c Milk, condensed
4 ea Chocolate, unsweetened, squa
1 t Vanilla
1 c Nuts, chopped
Melt the butter, add the sugar, molasses and the milk and bring to a boil. Cut the chocolate in small pieces and add, stirring constantly until the chocolate is melted. Boil until the caramel forms a soft ball when dropped in cold water. Add the extract and the nuts and pour into a greased pan. Cool a little and when fairly firm, cut in squares. Did you grow up with hard caramel candy as a kid? My grandmother would make caramel candies with 2 ingredients and they are my dad's all-time favorites. The candy is prepared in a large pan so that the ingredients get to reduce and combine to delicious sweet and brown caramels. Once they are done cooking they are spread over a buttered baking sheet to cut them out easily. My grandmother would shape them into balls. You can make these amazing nostalgic caramel candies at home, so as to make them for your kids or grandkids. Your family will love you for this.

Old Fashion Candy Making Cream Caramels
These cream caramels are so delicious that they are dangerous. You won't want to quit eating them. They are great for the holiday get togethers.
Here's the recipe:
2 cups sugar
2 cups heavy cream
1/2 cup butter
1/4 cup corn syrup
Coarse salt, if desired
Mix together butter and half the cream and the syrup. Start warming. As butter is melting add the sugar. Stir and cook to a boil. Add second cup of heavy cream. Stir and bring to a boil. Be careful that you don't let it boil over. Monitor temperature with a candy thermometer and cook until it reaches 245 degrees. Pour into a buttered 8x8 pan. If desired, sprinkle coarse salt over top. Cool, cut into 1 inch square pieces and wrap in wax paper. Enjoy
