How to Cook Southern Country Style Green Beans
Southern Country Style Green Beans
2 - 50 ounce cans green beans
bacon grease
2 cups chopped onion
salt and pepper
In a large pan bring green beans, the liquid in the cans, and two large spoons of bacon grease to a rolling boil. Salt and pepper the beans. Reduce heat to medium-low so that the green beans are just at a simmer. Allow the beans to cook for one hour.
Add the chopped onion and gently fold the onion into the green beans. Add a few more shakes of salt and pepper. Allow the beans to cook for another one to two hours, checking them approximately every 30 minutes.  Once the liquid has almost completely evaporated, and the beans are starting to look shriveled, remove from the heat and either serve immediately or allow to cool and refrigerate for use later.

Ingredients:
4 slices bacon, diced
1/2 onion, diced
2 pounds Green beans, cleaned and tipped
1/2 stick of butter
1 tablespoon salt and pepper blend
1 tablespoon garlic, minced
1/2 tablespoon full of all purpose seasoning
1/2 tablespoon of Old Bay seasoning
2 tablespoon sugar ( this ingredients is optional)
Directions:
Use your favorite soup pot, fry the bacon and onions together until the bacon becomes crispy.
And all of your remaining ingredients and cover the beans with water.
Bring the string beans to a boil and then reduce the heat to a simmer, and cover the pot with a lid.
Allow your beings to cook for one hour until they are extremely tender.
Taste your stream beans to see if you need to add more salt or pepper, and if you would like to sweeten them up a little bit at sugar.

3 14.5 OZ.CANS OF GREEN BEANS (DO NOT DRAIN)
1/8 CUP COOKING OIL
1 TBSP. GRANULATED SUGAR
This will make the best green beans you have ever tasted, but ONLY if you follow the directions carefully. Many people do not cook them down to the caramelization stage and complain that they are sweet. This is because the directions are not followed. Add three ingredients to a nonstick saucepan. Bring to a boil and continue cooking on high.When water is almost gone, the beans will begin to sizzle. At this point you must stay in kitchen to watch them closely. The oil and sugar will then begin to caramelize in bottom of pot. You will notice the sides of pot becoming brown. Once this begins, take beans, and rub them on sides of pot that has glazing. The juice from the beans will deglaze the pot. Take them off the heat after they have formed a good glaze and you begin to smell it. Put about 1/2 cup water in pot and continue deglazing so caramelization is in beans and not on pot. Smash them a little breaking them apart if desired.
For 1 can recipe:
Use 1 tbsp. cooking oil and 1 tsp. sugar for every can of green beans. Always use juice from can.

The Most Delicious Southern Style Green Beans That You Ever Ate!

NOTE: EVERY pot of green beans is not always identical. It depends on your type of bacon, the hotness of your onion and your choice of seasonings. At times you may wish to remove some of your bacon drippings or use 3-4 slices of bacon as opposed to 5-6 pieces. (If you are not used to “Southern” cooking you may wish to remove most of your bacon drippings, to start with) It all just depends on your personal taste! Sometimes you need more or even less chicken broth, it all just depends on humidity/weather, time of year (temp). So use this as a guide and adjust to YOUR tastes! Whether it is more garlic, Cajun seasoning, red pepper flakes etc., take this and MAKE IT YOUR OWN! These will last in an airtight container up to 3-4 days in the refrigerator. You can also freeze in airtight container for up to 3 months.
2-2 ½ lbs fresh (or in a pinch a good quality frozen) green beans, washed, trimmed and snapped into bite sized pieces, Do NOT forget to check for stems!
1-1 1/2 onion (sized as to your preference and cut anyway you like them cut) I used a sweet onion
4-6 slices of bacon (you can cook the slices whole and crumble them up or cut them small while uncooked and pan fry them) You could also use a ham hock or a good ham bone.
½-1 teaspoon salt (adjust at the end of cooking to your taste)
½-1 teaspoon ground pepper (adjust at the end of cooking to your taste)
2-4 cups chicken broth (in a pinch water OK to use, though chicken broth adds a really great depth of flavor to the recipe
OPTIONAL (though HIGHLY recommended, I would NEVER leave these out):
1-2 cloves minced garlic (I used minced garlic from a jar)
1-2 teaspoons sugar
¼-1 Cajun seasoning (like Tony’s or try my homemade Cajun seasoning)
Adjust ALL seasonings to YOUR liking.
