3 Pounds corned beef brisket 6 carrots 2 turnips -- * see note 6 onions 6 potatoes 1 cabbage head * Substitute rutabagas for turnips if desired. Cut meat into serving-sized pieces, cover with water and bring to a boil. Lower heat and simmer for approximately 3-1/2 hours. Remove meat and keep warm. Scrub the vegetables and cut into quarters or cubes. Cut the cabbage into 6 wedges. Bring the broth to a boil; add carrots, turnips, onions and potatoes. Cook for 15 minutes. Add cabbage and cook for 15-20 minutes longer. Arrange meat on serving platter and place vegetables around the meat in an attractive pattern. Sprinkle all with fresh ground black pepper.

A New England Boiled Dinner from Irena Chalmers (Good Old Food!)
This dinner is a one pot wonder! Corned beef, turnips, carrots, beets and parsnips makes this a veggie full dinner too! We really enjoyed this meal from Irena Chalmers, maker of over 100 cookbooks. And I will definitely be using this cookbook again. Just be prepared to spend the day in the kitchen to make this recipe! :)
What you'll need: 3 lbs Corned Beef 1 T Black Pepper 1 tsp Dried Thyme 1 Bay Leaf 6 Carrots 2 Onions 2 Celery Stalks 4 Beets 6 Potatoes 3 Parsnips 1 Turnip 1 Cabbage Put beef in large pot and cover with boiling water. Add pepper, thyme, bay leaf, 2 carrots, the onions and the celery. Cover and cook for 2 1/2 hours. Put the beets in another pot, cover with water and boil for about 20-25 minutes or until fork tender. Drain beets, let cool and rub skin off. Cut beets in half. Remove beef from pot and keep warm. Strain veggies from broth but KEEP THE BROTH! Discard bay leaf and cooked veggies. Add the remaining, carrots, potatoes, parsnips and turnips to broth. Cook for 15 minutes. Add cabbage and cook another 7-10 minutes. Then add beets and cook for 8 minutes or until all veggies are done.
