This is Not Gingerbread I How to Make Pepper Cookies
Pepper cookies are a Christmas staple in my home country. But they are equally popular in other Baltic states and Scandinavia. Even though they look like gingerbread cookies – they are not. There is no ginger in this recipe. As the name suggests they contain pepper. The black pepper gives them a bit of a kick, but it is the other spices that really make this recipe come alive.
Heavy on cloves and cardamom which make them super fragrant. Cinnamon is also included and to tie it all together and give a slightly earthy flavour there is ground coriander. An unusual spice combination some may say, but that is what makes them unique, and it really works. Try it and you may just love it!

Holiday Baking Stream | Pfeffernüsse cookies Part 2

This was a live stream of me showing how I form the dough and bake my holiday Pfeffernüsse cookies which is a German Mennonite cookie. If you would like to make them yourself, the recipe I use is below:
1-1/3 cup + 1 Tbsp Sugar
1/2 cup Shortening or margarine
1 egg
1/3 cup white corn syrup
1 Tsp Baking powder
1 Tsp Baking soda
4-1/2 cups all purpose flour
1/3 cup sour cream
1/4 cup milk
1/4 Tsp of the following: cinnamon, nutmeg, cloves, ginger, allspice, black pepper, and anise oil.
Mix dry ingredients together in a separate bowl. Cream shortening and sugar together, stir in the egg, then add the corn syrup and anise oil. Mix in the dry ingredients slowly adding the sour cream and milk in between portions of the dry ingredients. Mix well and kneed into a good solid shape. Place in a ziplock bag and let chill in the fridge for at least 24hrs.
Roll bits of dough into a snake and cut pieces no larger than a game dice. Place on a greased cookie sheet spaced apart and bake in a pre-heated oven at 350 degrees F for about 8-9 minutes.

140g butter, 100 g sugar, mark of 1 vanilla bean, 1 egg white, 200g flour, 100g blanched almond flour; 1 TBSP vanilla sugar, 2 TBSP powdered sugar

300g flour, 2 egg yolks, 250g butter, 200g sugar, 1 tsp vanilla sugar, 1 pinch of salt
