Small Batch of Hush Puppies - So Easy to Make!
Easy recipe for a small batch of the best homemade hush puppies made with ground cornmeal and buttermilk. Fried to crispy perfection and ready in minutes!

???? INGREDIENTS
6 tablespoons cornmeal
2 tablespoons all-purpose flour
¼ teaspoon kosher salt
¼ teaspoon baking powder
⅛ teaspoon baking soda
⅛ teaspoon sugar
¼ cup buttermilk
1 large egg yolk
2 tablespoons finely chopped onions
vegetable oil
???? INSTRUCTIONS
1) Whisk together cornmeal, flour, salt, baking powder, baking soda, and sugar in a medium-sized bowl.
2) In a separate smaller bowl, whisk together the buttermilk and the egg yolk. Then, stir in the chopped onions.
3) Pour the wet mixture into the cornmeal mixture and stir until combined. Set the bowl aside.
4) In a deep 2-quart saucepan over medium heat, add enough oil to come halfway up the sides of the pot. Heat the oil to 350°F.
It is best to use a thermometer to make sure your oil is at the correct temperature.
5) Scoop the batter with a large spoon and use another spoon to push the batter into the oil. The hush puppy batter should be roughly the size of a golf ball, about 2 tablespoons each.
Make sure not to crowd the pot. In a 2-quart saucepan, I usually get 3 hushpuppies inside.
6) Turn the hush puppies frequently with a slotted spoon or tongs until golden brown on all sides, about 3-4 minutes.
7) Transfer the hushpuppies with a slotted spoon to a paper towel-lined plate to drain off the excess oil. Repeat until all of the batter is used.
8) Enjoy hot.
???? Expert Tip
A) This recipe moves fast so be sure to have all of your ingredients ready before starting.
B) Don't over mix the batter. It's okay if the batter is a little lumpy. Keeping the batter slightly lumpy is ideal for making perfect southern hush puppies!
B) I strongly encourage you to use a candy or food thermometer to maintain the correct temperature for frying, which is 350°F. Frying at the right oil temperature is so important. If the oil is too hot, the outsides will cook before the insides. If the oil is too cool, the hush puppies start to lose their shape. This is why it is so important to use a thermometer.

Hushpuppies Two Ways

Ingredients
Hushpuppies:
Vegetable or canola oil, for frying
1 1/2 cups self-rising cornmeal
1/2 cup self-rising flour
1 tablespoon Miss Brown’s House Seasoning, recipe follows
1/2 teaspoon baking powder
1/2 sweet onion, cut into large chunks
1 large egg
3/4 cup buttermilk
3/4 cup thinly sliced okra
Nonstick cooking spray, for the cookie scoop
Whipped Honey Butter:
1 stick (8 tablespoons) salted butter, at room temperature
1/4 cup honey
Kosher salt
Miss Brown’s House Seasoning:
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon kosher salt
1 tablespoon freshly ground pepper
Directions
Special equipment: a cookie scoop; a deep-fry thermometer
For the hushpuppies: Pour enough oil to reach 3 inches up the sides of a Dutch oven. Heat the oil to 375 degrees F.
Combine the cornmeal, flour, House Seasoning and baking powder in a medium bowl. Pulse the onions in a food processor until finely minced. Add to the cornmeal mixture and stir to combine. Add the egg and enough buttermilk to moisten into a batter. Separate half of the batter to another bowl, then stir the okra into one of the batters. (Make sure the batter isn’t too thin. It should hold its shape when scooped out with a spoon.)
Arrange some paper towels in a baking sheet and place a wire rack on top. Working in batches, drop heaping teaspoonfuls of each batter into the hot oil using a cookie scoop coated with nonstick cooking spray, and cook until golden brown, 2 to 2 1/2 minutes depending on the size (see Cook's Note). Drain the hushpuppies on the wire rack.
Meanwhile, make the whipped honey butter: Beat the butter and honey in a bowl with a hand mixer at medium-high speed until light and fluffy. Season with salt. Serve with the hushpuppies.
Miss Brown’s House Seasoning:
Yield: 5 tablespoons
Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl. Store in an airtight container.
Cook’s Note
Cut open the first hushpuppy after frying to make sure they're done all the way through. The cooking times always vary with hushpuppies because of the size differences.

How to make homemade hushpuppies. Hushpuppies go so well with fish, and you will want to make some of these the next
2 cups corn meal
1 tablespoons flour
2 tablespoons baking powder
1 teaspoon salt
1 cup whole milk
1/2 cup finely chopped onion
1 beaten egg
oil for frying
Mix together the dry ingredients stir the dry ingredients together. Add the milk, egg, and chopped onion. Heat oil to 350 degrees. Scoop about 1 tablespoon of batter per hushpuppy and drop into the oil. Fry until golden brown.
