6 sausages – I prefer free range
2 large onions
Around 400g (4 cups) chestnut mushrooms
Cider (a few tablespoons)
A dash of double cream (‘heavy cream’ in the US) or crème fraiche
French Chicken Casserole with Apples and Apple Cider | Delicious Creamy Chicken Recipe
This French Chicken Casserole is going to be your new seasonal favourite. Chicken thighs and legs slowly braised in apple cider and served with fried apple wedges are as scrumptious as it sounds.
Chicken casserole is an incredibly general term and basically means chicken cooked slowly in the oven until tender. A good casserole is always what I go to when I want a true comfort food for dinner.
What you add to that chicken will make all the difference, and in my case I went with a French recipe for Chicken a la Normande. In this recipe chicken thighs and legs are slowly braised in a dry apple cider. Can you just imagine the aroma that is going to fill your house?!
INGREDIENTS
1 tbsp olive oil
2 lbs chicken thighs and legs
salt
4 shallots diced or one medium onion
1 rib celery diced
4-5 thyme sprigs
2 cloves garlic minced
125g/4 oz bacon lardons or 6 strips of bacon, chopped
2 tbsp brandy or whiskey
2 tbsp flour
85 ml/1/3 cup chicken stock
400ml/1 1/2 cups hard dry apple cider such as Strongbow
2 apples peeled, cored and cut into wedges
125ml/1/2cup double cream/heavy cream

Southern Sweet Onion Casserole
This has become one of my favorite side dishes at Thanksgiving. The amazing sweetness of the caramelized onions with the saltiness of the Parmesan cheese and buttery cracker topping just sets off a taste combination you are going to love. You can double this recipe for larger gatherings, but remember, this takes some time to do. Caramelizing the onions can take up to an hour, but you can do them in the slow cooker overnight to get a jump on things in the morning. So give this easy to throw together recipe a try and let me know how you and your family/guests like it.

Ingredients:
4 large sweet onions
1/2 cup butter
1/4 cup brown sugar
2-3 teaspoons balsamic vinegar
6-8 strips of bacon cooked/crumbled
1 tablespoon minced garlic
1/2 cup sour cream
1/2 cup parmesan cheese
1/2 cup cheddar cheese
1/4 teaspoon dried thyme
1 sleep Ritz® crackers, crushed
Caramelize the onions in a large cast iron skillet in the butter. This should take about 1 hour on medium low.
Half way through add the brown sugar and balsamic vinegar and stir to combine.
Once onions are caramelized, add the crumbled bacon and garlic. Combine well.
Now put half the onion mixture into a small baking dish and spread out in dish.
Add the sour cream in dollops to the top of the mixture
Add 1/4 cup parmesan cheese and 1/4 cup cheddar cheese over top equally.
Sprinkle the thyme evenly over top.
Spread out the remaining onions over the top.
Sprinkle remaining parmesan over top.
In a small bowl combine the crushed crackers and cheddar cheese and mix well.
Spread topping over casserole evenly.
Bake in a 350° oven for 30-35 minutes until bubbly and topping is golden brown.

Comforting, Spirit Lifting Creamy Pork and Apple Casserole
This Pork & Apple Casserole is a warm comforting dinner on the table that lifts everyone's spirits and guarantees clear plates all around.

Ingredients:
• 2 tbsp olive oil
• 500g (1/1 lbs) pork shoulder steaks - chopped into large chunks
• ½ tsp salt
• ½ tsp black pepper
• 1 medium onion - peeled and chopped
• 8 mushrooms, sliced (I like chestnut mushrooms, but any medium sized mushroom will do – or swap for 12-14 button mushrooms)
• 2 cloves of garlic - peeled and crushed
• 240ml (1 cup) dry cider
• 420ml (1 ¾ cups) chicken or vegetable stock – water plus 2 stock cubes is fine
• ½ tsp dried sage
• 80ml (1/3 cup) double (heavy) cream
• 2 dessert apples - sliced into wedges (not too thin or they'll disintegrate) - I use Jazz apples
• Fresh sage leaves to serve
• Fresh thinly sliced apple to serve
Serve with roasted radishes, broccoli and mashed potato
Process:
• Preheat your oven to 170c/325f (fan)
• In a flame-proof casserole dish, heat up the oil and add the pork, salt and pepper. Cook on high heat, turning a few times for 5-6 minutes to seal the meat.
• Add the onions and mushrooms, turn the heat down to medium and cook for 5 minutes, stirring every so often until the onions soften.
• Add the garlic and cook for a further minute.
• Add in the cider, stock and dried sage.
• Stir and bring to the boil, place a lid on and place in the oven for 90 minutes. Check on it every so often to give it a stir and make sure it's not going dry. If it is, just add in a splash of water.
• Once the pork has been in the oven for 90 minutes, take it out and stir in the cream and apple slices.
• Place the lid back on and place back in the oven for 25 minutes until the apples are tender.
• Serve with green veg, mashed potatoes or roast potatoes.
• I like to top my casserole with sage leaves, thinly sliced apple and a grind of black pepper.
Can I freeze it?
Yes - make the casserole, then cool, cover and freeze. Defrost overnight in the refrigerator, then reheat as per the make-ahead instructions above.
Can I make it in the slow cooker?
Yes - cook in a large frying pan right up until it's ready to go in the oven, then instead of cooking in the oven, transfer to the slow cooker. Cook on high for 3 hours or low for 5 hours. After this time, add in the sliced apples and cook for a further hour (for high or low heat setting). Stir in the cream right before serving.
If you don't want to mess around with adding apples in the last hour of cooking, you can add them as soon as you add everything to the slow cooker. The apples will be softer and may fall apart a little, but it's a little simpler and easier and will still taste great. The total cooking time in the slow cooker will be 4 hours on a high heat and 6 hours on low heat. I'd also serve with a very thinly sliced apple for garnish too - so you have a bit of crunch and good apple flavour in there.

When it comes to a side dish, this CORN CASSEROLE is on the top of my list of favorites. This side dish goes beautifully with just about anything, I love it so much that I can eat it all alone, hot, warm or cold. My whole family loves it and it’s one of the first dishes everyone goes to on the buffet table. I always prepare a double batch for thanksgiving and Christmas a d when I need a dish for a potluck, this is one of my favorites to take, and I always give out the recipe a few times, I know it by heart. This corn casserole is so easy to prepare and it’ll never let you down. I hope you give it a try. ❤️

INGREDIENTS _________________
1 stick of salted butter (melted)
1 14.5 oz. Can Creamed Corn
1 15.25 oz. Can whole kernel sweet corn (drained)
1 large egg
1 C. Sour cream
1/4 C. Chopped green onions (white n green parts)
1/2 tsp. Sugar
Pepper as needed (optional)
1 8.5 oz. Box Jiffy corn muffin mix
Non stick spray
TOPPER_________________________
Chopped green onions (as needed)
Freshly grated cheese of your choice as needed (i used mixed Sharp cheddar and Monterrey jack)
TIPS__________________________
1. You can double this recipe, if you do, add 2-4 eggs (I use 3)
2. You can replace Sour cream with Greek yogurt or Mayonnaise (you decide)
3. You can use fresh, frozen (thawed) or canned corn
4. Use an 8x8 dish or 9x13 if doubling the recipe)
5. For heat you can use finely chopped seedless jalapeño or can pickled jalapeño (drained)
6. You can add finely chopped bell pepper (green, red,orange or yellow)
7. Bake till no longer jiggly In the center
8. Bake single recipe for approximately 45 minutes
Double recipe needs to be checked at 45 minutes and baked Longer if necessary til no longer jiggly in the center
9. Using a metal pan make take less Time than glass
10. ALL THESE TIPS ARE SUGGESTED, but you decide if you want to follow these tips or not, the decision is yours.

French Onion Green Bean Casserole - Gluten Free Recipe
This French Onion Green Bean Casserole is a fantastic gluten free replacement for that popular green bean casserole made with Campbell's cream of mushroom soup and the crispy French's crispy fried onions. This updated version borrows elements of French onion soup to create a casserole that might just upstage the old classic. With caramelized onions, gruyere cheese and a crispy bread crumb topping, this casserole has the flavor of French onion soup in a green bean casserole that's outstanding. Although this side dish has a holiday feel but it's simple enough for a weeknight meal too.
