Welcome to the Geojacklin kitchen.
Tennessee Onions. A dreamy combination of flavours combining Onions, Garlic and Cheese using a handful of ingredients you probably already have in your kitchen. You can also, should you wish, add herbs of your choice and indeed change the ratios of what we have here to suit your and your diners like. Also obviously by substituting the Butter, you can create a vegetarian version of it.
Use large, sweet onions for this recipe. You can even vary the cheese and use smoky cheese to achieve a different flavour. As always, we're just here to stimulate your thinking about how to easily create delicious food.
Our deliberate error (tee hee) was we mistakenly forgot to put the oven temperature into the video! The temp is 190c or 375f.
Ingredients: -
2 Large Sweet Onions
½ cup Butter, sliced
¼ cup all-purpose Flour
2 cups Milk
1 tsp Garlic Powder (or to taste)
1 tsp Onion Powder (or to taste)
1 tsp Paprika (or to taste)
½ tsp Salt
¼ tsp Black Pepper
½ cup shredded Cheese (Cheddar or any non-soft cheese of your choice)

1 can (10 1/2 oz.) Campbell's® Condensed Cream of Mushroom Soup
3/4 cup milk
1/8 tsp. black pepper
4 cups cooked cut green beans or 2 cans (14.5oz each) any style Del Monte® Green Beans, drained
1 1/3 cups FRENCH'S® Crispy Fried Onions
Directions
MIX soup, milk and pepper in a 1 1/2 -qt. baking dish. Stir in beans and 2/3 cup Crispy Fried Onions.
BAKE at 350°F for 30 min. or until hot. Stir.
TOP with remaining 2/3 cup onions. Bake 5 min. until onions are golden.

Ingredients:
For the Meatballs
1 pound medium ground beef
1 tablespoon Worcestershire sauce
2 tablespoons ketchup
1 teaspoon garlic powder
1 teaspoon Italian Seasoning
1 teaspoon salt
1 teaspoon ground black pepper
For the Onion Soup
3 medium yellow onion, sliced into rings
3 tablespoons unsalted butter
1 tablespoon olive oil
2 1⁄2 cups onion soup mixture (You can buy it in the pan or buy the powdered. If you want the casserole soupier, add more.)
2 medium bay leaves
1 medium sprig of fresh thyme or 1 tsp of dried
1⁄2 teaspoon garlic powder
2 teaspoons Worcestershire sauce
1 teaspoon ground black pepper
Finish and Toppings
5 - 6 medium slices of Swiss Cheese
1 medium sprig of thyme for garnish

Cheddar and Ritz Cracker Vidalia Onion Pie
Ingredients
1 cup Ritz cracker crumbs
4 tablespoons butter, melted
2 cups Vidalia onions, thinly sliced
2 tablespoons butter
2 eggs
3/4 cup milk
3/4 teaspoon salt
dash of pepper
1/3 cup shredded sharp cheddar cheese
1/4 teaspoon paprika
Mix Ritz crackers crumbs and melted butter.
Press into an 8 inch pie plate.
Saute Vidalia onions in 2 tablespoons butter until clear, but not brown.
With slotted spoon, spoon onions onto Ritz cracker crust.
Beat eggs with milk, salt, and pepper, pour over onions.
Sprinkle with cheese and paprika.
Bake at 350 for 30 minutes or until firm in the center.

Vidalia Onion Casserole
4-6 large Vidalia onions
2 T. unsalted butter
3 eggs
1 (5 oz.) can evaporated milk
1 c. crumbled Ritz crackers
1 1/2 c. shredded sharp cheddar cheese
1/2 tsp. salt
1/8 tsp. pepper
Crumb Topping:
1 c. crumbled Ritz crackers
3 T. unsalted butter, melted
Slice off root and stem end of onions; remove outer skins. Place onion halves on cutting board with cut sides down and slice onion halves into slivers about 1/4-inch to 1/2-inch thick.
Place onions in a saucepan and add water to just cover. Bring to a boil; reduce heat and simmer 8 minutes. Drain well.
Toss warm onions with the 2 tablespoons butter.
While onions cook, beat the eggs and evaporated milk together in a large bowl.
Add the warm cooked onions, cracker crumbs, shredded cheese, salt, and pepper. Stir to combine.
Place onion mixture in a 9x13-inch baking dish coated with non-stick cooking spray.
Prepare Crumb Topping:
Combine cracker crumbs and melted butter.
Sprinkle evenly over the top of the casserole.
Bake:
Bake at 375 degrees for 45 minutes, until set in the middle and golden brown.

35 buttery round crackers, crushed
1 cup shredded Cheddar cheese
2 eggs, beaten
¾ cup milk

Step 1
Preheat oven to 400 degrees F (200 degrees C).
Step 2
Place squash and onion in a large skillet over medium heat. Pour in a small amount of water. Cover, and cook until squash is tender, about 5 minutes. Drain well, and place in a large bowl.
Step 3
In a medium bowl, mix together cracker crumbs and cheese. Stir half of the cracker mixture into the cooked squash and onions. In a small bowl, mix together eggs and milk, then add to squash mixture. Stir in 1/4 cup melted butter, and season with salt and pepper. Spread into a 9x13 inch baking dish. Sprinkle with remaining cracker mixture, and dot with 2 tablespoons butter.
Step 4
Bake in preheated oven for 25 minutes, or until lightly browned.
