How To make Orange Pound Cake
1 lb Butter
1 lb Sugar, powdered
2 T Orange rind, grated
6 lg Eggs
3 1/2 c Flour (all-purpose),
-sifted 1/2 t Mace
1/4 t Salt
1/4 c Orange juice
1 c Apricot jam, strained
2 T Orange peel, shredded
Preheat oven to 350 degrees F. Cream butter until light and fluffy. Gradually add sifted sugar and rind. Cream thoroughly. Add eggs, one at a time, mixing well after each addition. Sift the flour before measuring, then combine the dry ingredients. Gradually add sifted dry ingredients to butter mixture. Add orange juice and combine thoroughly. Turn into buttered and floured 10-inch tube pan. Bake at 350 degrees F. for 50-60 minutes or until toothpick inserted in center comes out clean and cake is golden brown. Cool for 5 minutes. Turn onto wire rack and cool thoroughly. Brush with jam and top with orange peel. NOTES: * A luscious orange-flavored pound cake -- Absolutely the best cake I have ever eaten! I got the recipe from the mother of a friend. I think Don's mom got the recipe off the back of a sugar box. * If you try to make a pound cake with margarine or shortening you will end up with a tasteless mess. Butter is the major taste in a pound cake; even if it weren't, butter and margarine have different properties in baking, and this recipe is adjusted for butter. * Don't make this cake if you don't have an electric mixer or very strong wrists. I figure I spend nearly half an hour beating butter and such when I make this cake. Ultimate Moist Orange Bundt Cake | Moist Orange Pound Cake – This is one of my favourite cake of all time. It’s so flavorful and tasty with the orange zest in this cake. This is my first time using my bundt pan. The mould turned out amazing too. The cake itself isn’t too sweet as I know I am adding a cream cheese icing on top, well balanced of sweetness. Ingredients:
I am using a 7-inch bundt pan
2 oranges
Orange Bundt Cake:
140g (1 ¼ cup) cake flour
¾ tsp baking powder
¼ tsp salt
150g (1/2 cup+2 tbsp) unsalted butter, softened
130g (1/2 cup+2 tbsp) fine sugar
2 eggs
30g (2 tbsp) plain yogurt
50g (1/4 cup) orange juice, freshly squeezed from 2 oranges
1 tbsp orange zest, grated from 1 orange
1 tsp vanilla extract
Icing:
30g (2 tbsp) cream cheese
80g (1/2 cup+2 tbsp) powdered sugar
2 tsp orange juice
Sprinkles:
1 tbsp orange zest, grated from 1 orange
1 tbsp pistachio nuts, chopped
Instructions:
Orange Bundt Cake
1. Preheat oven at 160°C/320°F.
2. Grate 2 oranges for the zest, set aside. Squeeze 2 oranges, set aside.
3. Sift the flour, baking powder and salt into a large bowl. Set aside.
4. In another bowl, add softened butter and sugar. Mix on medium high speed until creamy, fluffy and pale. This will take about 5 min.
5. Add the eggs, one at a time. Mix until combined.
6. Add in the yogurt, mix on low just until combined.
7. Add in the sifted dry ingredients, spoon by spoon while mixing. Mix just until the flour disappear, do not over mix. Use a spatula to scrape bottom of bowl to ensure no lumps.
8. Add in the orange juice, orange zest and vanilla extract. Mix until they are incorporated. Do not over mix.
9. Grease and flour a 7-inch bundt pan. Pour the batter into the pan.
10. Bake in preheated oven at 160°C/320°F for about 50-55 min.
11. Remove the cake from the pan, and place it on the rack for cooling.
Icing
12. In a bowl, add cream cheese. Mash the cream cheese to soften it.
13. Sift the powdered sugar. Fold in until well combined.
14. Add the orange juice, and continue mixing until you get the right consistency. In this case, I like a thick consistency.
15. Spoon the icing on the surface of the cake.
16. Sprinkle the top with orange zest and chopped pistachio nuts.

오렌지 제스트 1큰술 (큰 오렌지 1개 분량)
중력분 250g
베이킹파우더 1큰술
- 오렌지시럽
오렌지주스 약 120g
(큰 오렌지 1개 분량의 주스에서 2큰술을 덜어낸 무게입니다 / 덜어낸 2큰술은 글레이즈용입니다)
설탕 2큰술 (30g)
- 글레이즈
슈가파우더 60g
오렌지주스 2큰술 (30g)
???? 시판 오렌지주스 200g , 생 오렌지주스 150g(큰 오렌지 1개) - 총 350g의 오렌지주스를 사용했어요.
(본반죽에 들어가는 오렌지주스는 시판용 / 오렌지시럽과 글레이즈에 사용한 오렌지주스는 생 오렌지 1개 분량입니다)
오렌지 제스트는 오렌지 1개분량이면 충분합니다.
준비해주세요 ✓
* 오븐을 170도로 예열해주세요.
* 오렌지 1개의 오렌지주스와 오렌지제스트를 만들어주세요.
* 파운드틀에 버터를 발라준후 유산지를 둘러주세요. 케이크를 분리할때 훨씬 수월합니다.
1. 깨끗한 볼에 달걀을 넣어 부드럽게 풀어주세요. 설탕, 식용유를 넣어 모두 잘 혼합해줍니다.(1-2분정도)
2. 오렌지주스와 오렌지 제스트를 반죽에 넣어 섞어주세요. 중력분과 베이킹파우더도 넣어 모든 재료를 잘 혼합해줍니다.
3. 준비해둔 팬에 반죽을 부어주세요. 170도로 예열된 오븐에 40분 구워줍니다. (반죽가운데에 이쑤시개를 찔러 넣어봤을때 묻어나오는 반죽이 없으면 꺼내줍니다.)
4. 반죽을 더욱 촉촉하게 만들어줄 오렌지시럽과 글레이즈를 만들어줄게요. 큰 오렌지 1개 분량의 주스를 준비해주세요. 거기에서 2큰술을 덜어낸 뒤 덜어낸 주스를 슈가파우더에 넣어 잘 섞어주면 글레이즈 완성입니다.
나머지 주스에(120g) 설탕 2큰술을 넣어 전자렌지에 30초-1분 돌려줍니다. 설탕이 잘 녹도록 섞어주면 오렌지시럽 완성입니다.
5. 구워준 오렌지 파운드케이크에 오렌지 시럽을 고르게 부어주세요. 1-2시간 상온에서 완전히 스며들도록 식혀준 다음 팬에서 꺼내줍니다. 글레이즈를 올려 마무리해줍니다.
- 보관방법
밀폐용기에 담아 상온에서 3-4일, 냉장고에서 일주일 보관가능합니다.
