Traditional Red Velvet Cake recipe with Beetroot ( no synthetic color) n Cream cheese Frosting
The origin of red velvet cake involved no colour .Red velvet cake was made using beetroot which gave the beautiful red colour to the cake . Check out the video to see how the cake retains beautiful red colour naturally !!
Ingredients
For Cake
Fresh beetroots- 2.5 nos small/ to make 1/2 cup beetroot puree
Whole Milk - 1/4 cup + 2 tbsps
Vinegar- 1/2 tsp+ 1/2 tbsp
Maida- 1.25 cups
Baking powder - 1 tsp
Cocoa powder - 1.5 tbsps
Vanilla essence - 1/2 tbsp
Lemon juice extract - 1 tbsp + 1/2 tsp
Granulated Sugar -1 cup
Vegetable oil - 1/4 cup
Soft butter -1/4 cup
Eggs- 2 small
For frosting
Cream cheese - 1.25 cups
Powdered Sugar - 1/4 cup + 2 tbsps
cold whipping cream - 1/2 cup
Red gel food colour (optional)

A real red velvet cake has buttermilk, vinegar, a TINY bit of cocoa powder and usually frosted with cream cheese frosting or ermine buttercream. This is the BEST red velvet cake recipe from scratch and it's so easy to make.

Red Velvet Cake Ingredients ►
14 ounces (397 g) AP flour
14 ounces (397 g) Granulated Sugar
2 Tablespoons (2 Tbsp) cocoa powder
1 teaspoon (1 tsp) salt
1 teaspoon (1 tsp) baking soda
2 large (2 ) eggs room temp
4 ounces (114 g) vegetable oil
8 ounces (227 g) buttermilk room temp
1 Tablespoons (1 Tbsp) white vinegar
6 ounces (170 g) unsalted butter melted but not hot
1 teaspoons (1 tsp) vanilla
1 Tablespoon (1 Tbsp) super red food coloring I prefer Americolor super red because it doesn't have a taste
Cream Cheese Frosting Ingredients ►
12 ounces (340 g) cream cheese softened
8 ounces (227 g) unsalted butter softened
1/2 teaspoon (1/2 tsp) orange extract
1/4 teaspoon (1/4 tsp) salt
26 ounces (737 g) powdered sugar sifted

2 cups Sifted AP flour (I used cake flour be sure you spoon and level your flour)
1/2 tsp Salt
1 tsp Baking Powder
1 tsp Baking Soda
3 tbsp Unsweetened coco powder
1 2/3 cups Granulated Sugar
1/2 cup melted butter (UNSALTED)
1/2 cup vegetable oil
2 Large eggs
2 tsp vanilla extract
1 cup buttermilk
2-3 tbs red food coloring (optional, just to add the beautiful red color)
1 tsp distilled vinegar (I used apple cider vinegar)
Make sure all your ingredients are room temperature so our cake will baked evenly

How to Make Red Velvet Cake
A light chocolate Red Velvet cake with lots of addictive cream cheese frosting and a crown of buttercream roses. This cake is moist but so light and fluffy, it really is the perfect match for all that delicious frosting! You can make this without any food coloring and it will be a light tan color, not quite red, but it will be eaten just as quickly! I did a lot of recipe testing for this much-requested cake but in the end I lightly adapted the recipe for the batter from a New York Times recipe. Wonderful moist fluffy sponge, and I loved the typo saying it made 8 inch layers! LOL, even the best of us make mistakes... Anyhow it's the vinegar that makes a huge difference, acid reacts with the leavening agents to give you a fluffier cake. Make sure to reserve enough batter for a cupcake. You'll use it to make the decorative crumble.

CAKE:
• 1 large beet
• 4 large eggs
• 1¼ cups buttermilk
• 1 cup warm water
• ½ cup vegetable oil
• 1 teaspoon vanilla extract
• 1 teaspoon distilled white vinegar
• 3 cups all-purpose flour
• 3 cups granulated sugar
• ½ cup cornstarch
• ⅓ cup unsweetened cocoa powder
• 1 tablespoon baking soda
• 1½ teaspoons baking powder
• 1½ teaspoons salt
FROSTING:
• 2 cups granulated sugar
• ½ cup all-purpose flour
• 2 cups whole milk
• 2 cups unsalted butter cubed and softened
• 1 teaspoon vanilla extract

NATURALLY RED VELVET CAKE:
1️⃣ 00:00:22 - Preheat oven to 425 degrees. Wrap beet in foil and roast until tender, about 1 hour. Reduce heat to 375 degrees for baking cake once beet is cooked. Butter three 9-inch cake rounds. Dust with flour and tap out the excess.
2️⃣ 00:00:35 - Remove roasted beet from foil. The skin should easily slide off the beet. Discard skin and place beet into a large mixing bowl. Use a hand mixer to whip the beet into mush.
3️⃣ 00:01:12 - Add eggs, buttermilk, warm water, oil, vanilla, and vinegar and beat until combined, about 1 minute. Add in flour, sugar, cornstarch, cocoa, baking soda, baking powder, and salt in a stand mixer using a low speed until the mixture is smooth.
4️⃣ 00:02:28 - Divide batter among the three prepared pans. Bake for 30-35 minutes until the cake meets the toothpick test (stick a toothpick in and it comes out clean).
5️⃣ Cool on wire racks for 15 minutes and then turn out the cakes onto the racks and allow to cool completely before frosting.
ERMINE FROSTING:
1️⃣ 00:02:56 - In a medium saucepan, whisk together flour and sugar over low heat. Cook for 2 minutes. Slowly whisk in milk and bring to a boil. Cook until thickened into a pudding-like consistency, about 1 minute, and then remove from heat. Pour into a bowl and place plastic wrap directly on top of the mixture so no skin forms. Set aside.
2️⃣ 00:04:16 - In a large bowl, use a hand mixer to whip butter until light and fluffy, about 2 minutes. Add in cooked milk mixture 1 to 2 tablespoons at a time, mixing well between each addition. Once all milk mixture has been added in, beat in vanilla and salt and continue beating until the frosting is thick and creamy and everything is well mixed in.
3️⃣ 00:05:18 - Assemble and frost the completely cooled cake.
NOTE: The video features a cake that was only frosted between layers. The written recipe provides enough icing to cover the entire cake. If you only want to frost in between layers as shown in the pictures, you can easily halve the Ermine Icing ingredients.
