How To make Red Velvet Cake 1
1 c Butter
2 1/2 c Flour
1 1/2 c Sugar
2 Eggs
1 oz Red food coloring
1 ts Water
2 ts Cocoa
1 ts Salt; scant
1 ts Baking soda
1 ts Vanilla
1 c Buttermilk
1 ts Vinegar
Cream butter and sugar, add eggs and beat well; add food coloring and water. Sift flour, salt, soda and cocoa together and add to creamed mixture with buttermilk and vanilla. Add vinegar (fold in lightly). Grease and flour 2 9-inch cake pans. Bake at 350F for about 30 minutes.
Here's a good frosting for this cake: CREAM CHEESE FROSTING 8 oz cream cheese, at room temperature 1/2 stick (1/4 cup)
butter, softened 2 c confectioneres' sugar, sifted if lumpy 1 tsp vanilla extract Combine the cream cheese, butter,
confectioners' sugar and vanilla in a mixing bowl. Beat well, or process until perfectly smooth and spreadable. You will have enough to fill and frost cake. -----

Day FIVE of my TEN DAYS OF CUPCAKES and it’s one of the most iconic classic flavours of cake possible… red velvet!
???? Recipe ????
Cupcakes
▪️75g unsalted butter
▪️150g caster sugar
▪️2 eggs
▪️1 tsp red food colouring
▪️1 tsp vanilla extract
▪️15 g cocoa powder
▪️125 ml buttermilk
▪️175 g plain flour
▪️1 tsp baking powder
▪️1/2 tsp bicarbonate of soda
▪️1 tsp white wine vinegar
Cream cheese frosting
▪️150g unsalted butter
▪️150g icing sugar
▪️300g full-fat cream cheese
▪️1 tsp vanilla extract
???? Method ????
Cupcakes
▪️Preheat your oven to 180ºC/160ºC fan and get 12 cupcake cases ready
▪️Beat together the butter and sugar in a stand mixer until smooth, add in the eggs, food colouring and vanilla and mix
▪️Add the cocoa powder, buttermilk, plain flour, baking powder, bicarbonate of soda and white wine vinegar and beat until smooth
▪️Spoon into the cases so it's even and bake for 20 minutes
▪️Once the cakes are baked, leave to cool fully
Cream Cheese Frosting
▪️Beat the butter and icing sugar together until light and fluffy
▪️Add in the full-fat cream cheese and vanilla extract and mix
▪️Scrape the bowl again finally, and beat again if needed
To Decorate
▪️If you want to use some cake crumbs to decorate, level off any peaked cupcakes and crumble up
▪️Using your piping bag and piping tip, pipe your cream cheese frosting onto the cupcakes
▪️Sprinkle over the cake crumbs and enjoy!

2 cups Sifted AP flour (I used cake flour be sure you spoon and level your flour)
1/2 tsp Salt
1 tsp Baking Powder
1 tsp Baking Soda
3 tbsp Unsweetened coco powder
1 2/3 cups Granulated Sugar
1/2 cup melted butter (UNSALTED)
1/2 cup vegetable oil
2 Large eggs
2 tsp vanilla extract
1 cup buttermilk
2-3 tbs red food coloring (optional, just to add the beautiful red color)
1 tsp distilled vinegar (I used apple cider vinegar)

Get ready for the softest red velvet cupcakes you will ever have! These cupcakes are so moist, bursting with flavour, and are topped with the most incredible cream cheese frosting. You won't be able to stop eating them!!
INGREDIENTS:
Red Velvet Cupcakes
- 1¼ cups (150 g) flour - regular, all purpose (see note 1 on blog post if you want to use cake flour)
- 1½ tbsp (9 g) cornflour - also known as cornstarch
- 1½ tbsp (7 g) cocoa powder - unsweetened
- ¼ tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt - omit if using salted butter
- 3 tbsp (43 g) unsalted butter - room temperature
- ⅓ cup (70 g) unflavoured vegetable oil - I use canola
- 1 cup (200 g) white sugar
- 2 large eggs - room temperature
- ½ tbsp vanilla essence/extract
- ¾ tsp white vinegar
- 1¾ tbsp red liquid food colour
- ⅓ cup buttermilk - room temperature
Bake at 160 °C (320°F) with the fan on. If your oven doesn't have a fan option, then you will need to increase the baking temperature to 175°C (347°F).
Cream Cheese Buttercream
- ½ cup (112 g) unsalted butter - room temperature
- 2¼ cups (285 g) icing sugar - also known as confectioners/powdered sugar
- ¾ cup (168 g) cream cheese - cold, firm type (see note 2)
- ¾ tsp vanilla essence/extract
- ¾ tbsp lemon juice - must be fresh
