Coffee Cake
Cinnamon Topping Ingredients:
1/3 cup brown sugar
½ cup cane sugar
2 teaspoons cinnamon
Combine all ingredients and mix well. Use as filling and topping for Coffee Cake.
Coffee Cake Batter Ingredients
1 cup butter
1 -1/4 cup cane sugar
2 eggs
1 cup Greek yogurt
1 teaspoon vanilla
2 cup self-rising flour
Cream butter and sugar. Add eggs, Greek yogurt and vanilla. Beat the mixture thoroughly. Stir flour in the mixture gradually.
Line a 9 inch round cake pan, pour in half the batter and sprinkle it with cinnamon topping. Add the remaining batter and sprinkle it with a little more topping. Bake the cake in a preheated oven at 350 degrees for 40 minutes or until toothpick inserted in the center comes out clean. Enjoy

Coffee Cake
Miss Roos, Waterloo.
Three coffee-cupfuls milk slightly warm, one coffee-cupful butter, melt the butter in the milk, one coffee-cupful sugar, two cakes Fleischmann’s yeast, one teacupful stoned raisins. Make a sponge in the evening, let it rise overnight: in the morning stiffen with flour and knead about half an hour. When risen again roll out an inch thick and put in pans, then when light melt butter and thicken with flour and spread on cakes. Bake. Before serving sprinkle with cinnamon and sugar.

Coffee Cake
Serves 6-8
Ingredients:
1 1/2 cups all-purpose flour (or gluten-free flour blend)
3/4 cup sugar
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1/4 cup extra light olive oil
3/4 cup milk
1 egg
2 teaspoons vanilla extract
1/2 teaspoon almond extract
For the topping:
1/2 cup packed brown sugar
1/4 cup all-purpose flour
1/2 teaspoon ground cinnamon
3 Tablespoons cold unsalted butter
Instructions:
Preheat oven to 375 degrees. Grease a round 9-inch cake pan with butter.
In a large mixing bowl, combine the flour, sugar, baking powder and salt. Mix to combine. Add the oil, milk, egg and extracts. Mix again. Pour batter into greased pan.
In a mini food processor, mix the topping ingredients until mixture has the texture of cornmeal. Sprinkle topping over batter.
Bake for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean. Cool for at least 10 minutes. Cut into wedges and serve!

1 cup (240 grams) active sourdough starter, 100% hydration
2 1/2 cups (345 grams) all-purpose flour
Filling/Topping:
1/2 cup sucanat or brown sugar
1 tablespoon cinnamon
1/2 cup butter, melted
3/4 cup pecans (toasted and chopped) or 1 cup of wild blueberries, optional
Coffee Cake Dough:
Overnight sponge
1 cup butter, melted and cooled
2 large eggs, lightly beaten
1/2 cup cane sugar (or coconut sugar or sucanat)

Here’s a sample baking schedule for this sourdough coffee cake to help you plan your bake:
◾The afternoon before you plan on baking: Feed your sourdough starter at around noon to 2:00.
◾The evening before: Mix together overnight sponge just before going to bed.
◾The next morning: Assemble and bake the sourdough coffee cake.
So if you’d like to eat this Sunday morning, feed your starter on Saturday afternoon.
