How To make Party Nibbles: Ginger Shrimp
2 lb Large shrimp
1/4 c Vegetable oil
1/4 c Lime juice
2 tb Fresh gingerroot, minced
2 Garlic cloves, minced
2 sm Jalapeno peppers,
-coarsely chopped 1 pn Pepper
Lime wedges Peel and devein shrimp, leaving tails on. In blender, pure half of the oil, lime juice, giger, garlic, jalapeno peppers and pepper; toss gently with shrimp to coat well. Cover and refrigerate for 1 hour. Meanwhile, soak wooden skewers in cold water for 30 minutes. Thread 3 or 4 shrimp onto each skewer. Discard remaining marinade. Brush one side of shrimp with some of the remaining oil. cook shrimp, oiled side down, over medium-hot grill or broil for about 2 minutes per side or until pink and firm to the touch, turning once and brushing with remaining oil. Ginger-Soy-Lime Marinated Shrimp

Ingredients
2 large shallots, peeled and chopped
1 (2-inch) piece fresh ginger, peeled and chopped
4 cloves garlic, smashed
3/4 cup soy sauce (gluten-free, if desired)
1/2 cup fresh lime juice
2 tablespoons sugar
1/4 cup chopped green onions
1/4 cup peanut oil
1/4 teaspoon coarsely ground black pepper
2 pounds large shrimp, shells and tails on
Directions
Place shallots, ginger, garlic, soy, lime juice, and sugar in a blender and blend until smooth. Add the green onion and oil and blend until combined. Season with black pepper, to taste. Place shrimp in a large bowl, pour the marinade over, and let marinate at room temperature for 20 minutes.
Preheat a grill to high. Remove shrimp from the marinade and grill for 1 1/2 to 2 minutes per side. Serve on brown paper bags, if desired.
