Enjoy this quick light & delicious tomato sauce with pasta recipe. This video fully illustrates a simple recipe that is very easy to prepare. Angel Hair Al Pomodoro sauce is made from scratch and consists of only the freshest of ingredients, such as tomato, EVOO, grated parmesan, fresh basil onion and garlic. I like to use fresh ripe Roma tomatoes and extra virgin olive oil (EVOO) for this dish. The EVOO gives the tomato sauce a distinctive flavor and is what makes this dish a heart-healthy alternative. All these fresh ingredients coming together makes a fantastic light and flavorful tomato sauce. What I also like about this dish is that it only takes a few ingredients and about 15 minutes from start to finish. It’s quick and will satisfy your craving for pasta.
This recipe was one of my father’s (Angelo) favorites. He was born in Naples, Italy and came here to America when he was 24 years old and opened his first Italian restaurant in Brooklyn, NY.

Ingredients:
1 lb. Angel Hair Pasta
8-10 Lg. Roma tomatoes
¼ cup of EVOO
2 tbsp. of diced yellow onion
1 tbsp. of chopped garlic
4-5 fresh whole basil leaves
2 tbsp. of grated Parmesan
¼ teaspoon of crushed red pepper
1 teaspoon of salt
¼ teaspoon of black pepper
2 tbsp of butter

Basic Parmesan Pomodoro

Ingredients
1/3 cup plus 2 tablespoons extra-virgin olive oil
5 cloves garlic, peeled and smashed
3 large, full stems basil
Three 14-ounce cans peeled cherry tomatoes
1 carrot, peeled and halved
8 ounces Parmigiano-Reggiano rind, cut into 3-inch pieces
Kosher salt
1 pound penne rigate pasta
1/2 cup grated Parmigiano-Reggiano, plus more for serving
3 to 4 tablespoons butter
Directions
Heat a medium nonreactive saucepan over medium-high heat. Add 1/3 cup of the oil and the garlic, and reduce the heat to medium. Cook the garlic, stirring often and mashing gently with a wooden spoon, until golden brown and beginning to soften, 5 minutes. Add the basil, tomatoes and their juices, the carrots and cheese rinds. Stir with a wooden spoon to combine. Bring to a simmer and adjust the heat to maintain a simmer. Cook for 35 minutes stirring occasionally to prevent sticking. Add 1 teaspoon of the salt. Remove from the heat and cool slightly.
Remove the rinds, carrots and basil. At this point you can use an immersion blender to puree slightly or leave it as a chunky sauce.
Bring a large pot of salted water to a boil. Cook the penne 2 minutes less than the package directions. Meanwhile, rewarm the sauce in a large, straight-sided skillet set over medium heat. Using a spider, strain the pasta from the water and add it directly into the pan with sauce, reserving 1/2 cup of the pasta water. Before stirring, sprinkle the pasta with the grated cheese. Toss the pasta, cheese and sauce together. Add the butter, the remaining 2 tablespoons olive oil and the reserved pasta water and continue to cook until the sauce is creamy and the pasta is al dente. Serve topped with more cheese if desired.

Pasta Al Pomodoro | Pasta with tomato and basil | EASY AND QUICK | 5 INGREDIENTS |
A spectacular and easy pasta dish made with just simple Ingredients, pasta al pomodoro! this is my version of the recipe in which I tossed in some fresh mozzarella for a cheesy twist to the recipe! this pasta dish doesn't need any garlic or anything let the juicy tomatoes do its thing! *INGREDIENTS:
1) 250g spaghetti
2) 4 medium size tomatoes
3) salt pepper
4) 100g fresh buffalo mozzarella
5) handful of chopped basil
*INSTRUCTIONS:
1) In a large pot bring the water to a boil, add salt then your pasta and cook for 8-10 minutes.
2) Meanwhile in a pan add in your olive oil then on medium heat add in your chopped tomatoes and cook for 5-7 minutes, add in some pasta water then season with salt and pepper.
3) Now toss in your pasta straight from the pot and mix well with the tomatoes.
4) switch off the flame and add in mozarella cheese with basil and mix everything well!!
5) finish with some more basil and serve!!
