Fresh Peach Cake

Ingredients
1/4 pound (1 stick) unsalted butter, at room temperature
1 1/2 cups sugar, divided
2 extra-large eggs, at room temperature
1 cup sour cream, at room temperature
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 teaspoon ground cinnamon
3 large, ripe peaches, peeled, pitted, and sliced
1/2 cup chopped pecans
Directions
Preheat the oven to 350 degrees F. Grease a 9-inch square baking pan.
In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and 1 cup of the sugar for 3 to 5 minutes on medium-high speed, until light and fluffy. With the mixer on low, add the eggs, one at a time, then the sour cream and vanilla, and mix until the batter is smooth. In a separate bowl, sift together the flour, baking soda, baking powder, and salt. With the mixer on low, slowly add the dry ingredients to the batter and mix just until combined. In a small bowl, combine the remaining 1/2 cup sugar and the cinnamon.
Spread half of the batter evenly in the pan. Top with half of the peaches, then sprinkle with two-thirds of the sugar mixture. Spread the remaining batter on top, arrange the remaining peaches on top, and sprinkle with the remaining sugar mixture and the pecans.
Bake the cake for 45 to 55 minutes, until a toothpick inserted in the center comes out clean. Serve warm or at room temperature.

Peach Cobbler Ingredients:
4 pounds (1.8kg) fresh firm but ripe peaches, halved, pitted, and cut into 1⁄2-inch wedges, or thawed frozen sliced peaches
3⁄4 cup packed light brown sugar (5.8 oz / 165g)
1 tablespoon cornstarch
1 1⁄2 teaspoons ground ginger
1⁄2 teaspoon ground cinnamon
1⁄4 teaspoon ground nutmeg
1⁄2 teaspoon Diamond Crystal kosher salt or 1⁄4 teaspoon Morton kosher salt
3 tablespoons fresh lemon juice
2 teaspoons vanilla extract
All-Purpose Drop Biscuit Dough
(page 336), formed into biscuits and chilled
Heavy cream, for brushing and serving Demerara sugar, for sprinkling
All-Purpose Drop Biscuit Dough
1⁄3 cup sugar (2.3 oz / 66g)
1 teaspoon finely grated orange or lemon zest
3 cups all-purpose flour (13.8 oz / 390g), plus more for the surface
4 teaspoons baking powder
11⁄2 teaspoons Diamond Crystal kosher salt or 3⁄4 teaspoon Morton kosher salt
1 1⁄2 sticks unsalted butter (6 oz / 170g), frozen
1 1⁄2 cups heavy cream (12.7 oz / 360g), plus 1⁄2 cup (4.2 oz / 120g) if making drop biscuits, chilled

HOW TO MAKE PEACH COBBLER USING FRESH PEACHES: Easy Recipe for the Best Homemade Peach Cobbler
If you've ever wanted to learn How to Make Peach Cobbler using fresh peaches, this recipe is for you. In this video, I also explain how you can make it with frozen or canned peaches, but hopefully, you're here because you want to make it using fresh ones. Once you taste it, you'll see, it really is so much better. Read on for the recipe.
Peach Cobbler
approx. 6 fresh peaches (or a 1lb. bag of frozen peaches, or 30oz. can of peaches in syrup)
1 1/2 cups self rising flour (if using all purpose flour, add 2 tsp. baking soda & 1/2 tsp. salt)
2 cups sugar, divided
1 cup water
1 cup milk
1 stick of butter
1 Tbsp. lemon juice
cinnamon or cinnamon sugar for sprinkling on top
To prepare peaches, use a paring knife to slice a small X on the bottom of each peach, only cutting through the skin. Place peaches in boiling water for 15-20 seconds. Remove and immediately place in ice bath for 30 seconds. Peaches should easily peel when you start by peeling back from where you scored the skin earlier. Once peeled, slice peaches and place in bowl. Then add 1 Tbsp. lemon juice to them, mix, and set aside.
Place one cup water and 1 cup sugar in a large saucepan over medium high heat. When sugar is fully dissolved, add in sliced peaches. Stir and let it come to a boil. Once it boils, lower heat and let simmer 10 minutes.
Preheat oven to 350º. Place a stick of butter into a 9x13 baking dish, and let it melt in the oven.
Prepare batter by placing 1 1/2 cups flour, 1 cup sugar, and 1 cup milk in a medium size mixing bowl. Whisk to combine.
When butter has melted, pour batter evenly into baking dish and DO NOT STIR.
Spoon in the peaches on top, as evenly as possible, and include all the syrup. DO NOT STIR.
Sprinkle with cinnamon or cinnamon sugar and place in oven to bake at 350º for 30 minutes, or until golden brown on top.
This peach cobbler is best served warm with a scoop of vanilla ice cream on top.
