How To make Pecan Cinnamon Muffins
1 1/2 c Unbleached Flour, Sifted
1/4 c Sugar
1/4 c Brown Sugar, Packed
2 t Baking Powder
1/2 t Salt
1/2 t Ground Cinnamon
1 Large Egg, Slightly Beaten
1/2 c Vegetable Oil
1/2 c Milk
1/2 c Chopped Pecans
Sift together flour, sugar, brown sugar, baking powder, salt and cinnamon into mixing bowl. Combine egg, oil and mil in small bowl; blend well. Add all at once to dry ingredients, stirring just enough to moisten. Stir in pecans. Spoon batter into greased 2 1/2-inch muffin-pan cups, filling each 2/3rds full. Bake in 400 degree F. oven 20 minutes or until golden brown. Serve hot with butter and homemade jelly or jam. Serving Hint: Match the mood of your mealtime by using a variety of pretty napkins to line a muffin basket. For a picnic, choose a red and white checked napkin; for special dinners, use your finest linen napkins; and for Christmas, of course, a bright red napkin.

Vintage Recipe: Cinnamon Pecan Muffins // Cozy, Cinnamon Goodness
Today's vintage recipe is cinnamon pecan muffins. Although it’s still hot outside, I couldn’t resist making something with a touch of fall. These muffins are full of cozy cinnamon flavor and would be phenomenal enjoyed with your favorite coffee. I know the recipe may look like it has a lot of cinnamon in it, but personally, I love cinnamon so it was perfect for me. However, you can add more or less depending on your cinnamon preference. If you make it, let me know how it turned out!
Original 1982 Recipe:
1 cup sugar
2 cups flour
1/4 tsp. salt
2 tsp. baking powder
1/2 cup melted butter
4 tsp. cinnamon
1 cup chopped pecans
1 cup milk
2 eggs, beaten
Preheat oven to 425℉. Sift dry ingredients together. Add nuts. Mix together milk, melted butter, and beaten eggs. Combine dry and liquid ingredients quickly with little stirring. Bake for 15 minutes. Yield: 12 muffins.

For 12-16 muffins you will need:
78g (1/3cup) butter
300g (10.5 oz) granulated sugar
10g (2tsp) vanilla sugar
142g (5oz) milk
142g (5oz) eggs
71g (2.5 oz) vegetable oil
370g (13oz) all purpose flour
10g (2 tsp) baking powder
pinch of salt
110g (4oz) pecans
10g (2tsp) cinnamon powder

How to make Mini Cinnamon Muffins! These sweet miniature cinnamon muffins have soft and fluffy vanilla centers and are topped with melted butter and sprinkled with cinnamon and sugar.

Ingredients
1 ½ cups all purpose flour (185g)
2/3 cup sugar (135g)
2 teaspoon baking powder
2 teaspoon cornstarch
½ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon nutmeg
1 large egg lightly beaten
1 teaspoon vanilla
½ cup buttermilk* (120ml)
6 Tablespoons unsalted butter melted and cooled (85g)
Topping
4 Tablespoons salted butter melted (60g)
4 Tablespoons sugar
2 teaspoon ground cinnamon
Instructions
00:00 Introduction
Preheat oven to 375F (190C) and line a 24 count mini muffin tin with paper liners or lightly grease and flour.
00:26 Combine flour, sugar, baking powder, cornstarch salt, cinnamon, and nutmeg in a large bowl and whisk until well-combined.
00:50 In a separate bowl, whisk together egg, vanilla, and buttermilk.
While still whisking the wet ingredients, slowly pour butter until incorporated (mixture may curdle slightly).
02:20 Add dry ingredients to wet and, using a spatula, gently stir ingredients together until just combined -- do not over-mix or your muffins will be dense and dry!

Transfer to 375F (190C) oven and bake for 11-13 minutes or until a toothpick inserted in the center comes out with moist crumbs (not wet batter, there should be crumbs or the toothpick should be clean, but don't over-bake muffins or they will be dry).
Topping

Stir together sugar and ground cinnamon and then sprinkle over each muffin.
