How To make Pedernales River Chili
3 tb Lard
4 lb Beef,coarse grind
1 Onion
2 Garlic cloves
3 ts Salt
1 ts Oregano,dried,pref. Mexican
1 ts Cumin
2 c Water
32 oz Tomatoes,whole
4 tb Red chile,hot,ground
2 tb Red chile,mild,ground
1. Melt the lard or bacon drippings in a large saute pan over medium heat.
Add the meat to the pan. Break up any lumps with a fork and cook, stirring occasionally until the meat is evenly browned.~ 2. Add the onions and garlic and cook until the onions are translucent.~ 3. Stir in the salt, oregano, cumin, water, and tomatoes.~ 4. Gradually stir in the ground chile, testing until you achieve the degree of hotness and flavor the suits your palate. Bring to a boil, then lower heat and simmer, uncovered, for 1 hour. Stir occasionally.~

Texas Pedernales River Chili
President Lyndon B. Johnson's favorite chili, made with 2 pounds ground beef , 1 sweet onion, 3 cloves garlic, 3 tablespoons chili powder, 2 teaspoons cumin, 1 teaspoon oregano,1 splash hot sauce, 1 quart water, 1 each 28oz can whole tomatoes broken up, 1 Jalapeno pepper cut in half and seeds removed, 2 cans dark kidney beans, simmered 1 hour 40 minutes total.
Real Texas Chili is nothing more then meat, chilie's, and water simmered together. The meat can be anything from beef, venison, goat, bear, chicken, pork all the way to Hooverhog and rattlesnake, what ever a cowboy found to put in the chili pot.

Chili - Easy - Old Family Recipe
Easy to make Chili with Beans from an old Ramirez family recipe. Make it in about an hour with ease.
RECIPE
2 lbs meat of your choice
2 pkg of Chili mix
1 15oz can of tomatoes
1 15oz can of tomato sauce
1 26oz can of Ranch Style beans
1 large onion diced
2 tsp of garlic chopped
Salt and Pepper to taste
Brown and drain meat. Add meat and onion back to pot. Sauté until onions are tender. Add all other ingredients including water. Add enough water to reach consistency of your liking. Add salt and pepper to taste.

Originally from Texas, he has moved to my neck of the woods and we got together to make some Dutch oven Texas Style Pedernales chili and Broccoli, Jalapeno, Cheddar Cheese Cornbread!

Ingredients
For cornbread
Whole milk 1⁄2 Cup (8 tbs)
Cornbread mix 2 Cup (32 tbs) (Stoneground)
Garlic 3 Clove (15 gm)
Cheddar cheese 1 1⁄2 Cup (24 tbs), divided
Frozen broccoli 5 Ounce (1/2 Bag)
Jalapeno 2 , seeded and minced
Cottage cheese 8 Ounce
Onion 1 Medium
Eggs 4
Butter 1⁄2 Cup (8 tbs)
For pedernales chill
Coarsely ground beef 2 Pound
Onion 1 Medium, chopped
Garlic 1 Clove (5 gm), minced
Dried oregano 1⁄2 Teaspoon
Ground cumin 1⁄2 Teaspoon
Chili powder 3 Teaspoon
Worchestershire sauce 1 Tablespoon
Canned diced tomatoes 16 Ounce (1 Can / 1 1/2 Cup)
Hot sauce 4 Dash (Or To Taste)
Salt To Taste
Beef stock 1 Cup (16 tbs)
Pepper To Taste
