How To Make Picadillo

Recipe:
3 tablespoons or vegetable oil
2cups diced white onion
2 teaspoons kosher salt
3 large garlic cloves
2 ¼ pounds of ripe tomatoes cored and chopped
2 dried bay leaves
½ teaspoon of dried thyme
1 tsp of red pepper flakes (Optional)
1 teaspoon sugar
2 teaspoons apple cider vinegar
1 pound of lean ground beef
1 pound of lean ground pork
black pepper
½ generous cup of pimento stuffed olives sliced or halved
¼ cup of raisins
3 tablespoons of pickled jalapenos including liquid
1 tablespoon of drained capers
¼ cup of slivered almonds
¼ cup cilantro
2 tablespoons of chopped flat leaf parsley
2 tablespoons of mint leaves
Heat oil in pan and add onions and a generous pinch of salt ,then cook stirring occasionally until onions are translucent about 5 minutes . Add garlic,cook for a minute then add tomatoes ,bay leaves,thyme,sugar,vinegar and 1 teaspoon of the salt. Let the mixture come to a boil,then lower the heat to maintain a vigorous simmer and cook, stirring occasionally until all the liquid has evaporated about 45 minutes. Transfer to bowl.
Wipe out the pot, set it over high heat, and when it's hot, add the ground beef and pork without any oil. Season with freshly ground black pepper and 3⁄4 teaspoon kosher salt. Cook, stirring and breaking up the meat, until it is cooked through, then add the olives, raisins, pickled jalapeños, and capers. Cook until the liquid from the meat has evaporated, about 5 minutes. Add the tomato mixture and lower the heat to medium. Cover and cook until the flavors have melded, about 5 minutes, then stir in the almonds and herbs.

NANA'S PICADILLO RECIPE INGREDIENTS:
- 1 pound ground beef (can be kosher)
- 1 cup of Uncle Ben's Instant Rice
- 1 onion
- 1 large green pepper
- 1 eight ounce can of tomato sauce
- 1 eight ounce jar of sweet red peppers
- 1 eight ounce can of peas
- 1 small jar of slices olives (just a few spoonfuls)
- 1 small jar of capers (just a few spoonfuls, also)
- some dry wine
- oil (Goya or any spanish oil works great)
- some salt, oregano, GARLIC POWDER (or diced fresh garlic, if you're fancy), & italian seasoning
SERVES: ABOUT 4 - 6 (depending on how hungry you are)

For the Sauce
1 medium can of diced tomatoes (1 1/2 cups) (I use garlic and herb Italian.)
1⁄3 medium onion (I use Spanish or red.)
4 cloves garlic
1⁄2 medium green bell pepper
1 medium Jalapeño pepper
1⁄2 cup fresh basil
1⁄2 cup fresh parsley
1⁄4 cup olive oil
For the Picadillo
1 tablespoon olive oil for frying
1⁄2 small finely chopped onion
3 cloves garlic finely chopped
1⁄2 medium finely chopped red bell pepper
2 medium bay leaves
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon oregano
1⁄2 teaspoon white pepper (or 1 tsp of black)
1 teaspoon salt
3 tablespoons tomato paste
1 pound lean ground beef
1⁄2 cup green olives
2 tablespoons brine from olives
2 tablespoons capers

For The Sofrito
▢¼ cup extra virgin olive oil
▢1 medium red onion diced
▢1 cubanelle pepper seeded, deveined and diced
▢4 garlic cloves peeled and chopped
▢12 oz can no-sodium diced tomatoes
▢1 cup fresh herbs medley basil, oregano, parsley, etc.
▢Salt and black pepper to taste
For the picadillo
▢2 tablespoon olive oil
▢1 medium yellow onion finely chopped
▢1 medium bell pepper cored and seeded, finely chopped
▢2 tablespoon tomato paste
▢4 cloves garlic finely chopped
▢2 teaspoon ground cumin
▢2 teaspoon smoked sweet paprika
▢2 teaspoon dried oregano
▢½ tablespoon Kosher salt
▢½ tablespoon ground black pepper
▢2 bay leaves
▢½ cup dry white cooking wine
▢1 ½ pounds ground beef
▢½ cup pimento stuffed olives
▢2 tablespoon olives brine from the jar
▢2 tablespoon capers
Cuban Picadillo & Black Bean & Corn Salad And Sazon Sauce HD 720p
Cuban Picadillo
Ingredients: serves 4
1 ½ lb (675g) (24 oz) ground beef
1 medium sweet onion chopped
4-6 cloves minced garlic
1 ½ teasp (7ml) sazon seasoning
3-4 tablesp (45ml-60ml) olive oil
1x14.5 oz can diced tomatoes do not drain
½ cup ( 55g) (2 oz) raisins
1 cup ( 250ml) (8 fl oz) beef stock
½ cup (55g) (2oz) sliced olives
2 tblsp (30ml) capers
1 medium potato cooked and cubed
1 cup (140g) (5oz) defrosted frozen mixed vegetables
Seasoning to taste
Instruction:
Heat oil in a large skillet
Sauté onion and garlic in the oil until transparent.
Add sazon seasoning, cook stirring for a minute, add the ground beef, breaking up any lumps. Cook until browned.
Add diced tomatoes, stock and raisins, bring to the boil.
Cover and turn down the heat, cook for approx. 15 minutes.
Add olives, mixed vegetables, capers, and potatoes, cook until heated through.
Season to taste, serve.
Black Bean and Corn Salad
Ingredients: serves 6
2 cans black beans drained and rinsed
1 1/2 cups corn kernels fresh, or frozen
1/4 cup sweet onioned chopped
1 sweet red pepper diced
1 avocado peeled, pit removed and diced (optional)
1 jalapeno ribs and seeds removed, then minced
1/3 cup cilantro leaves chopped
1/3 cup olive oil
1/4 cup lime juice
2 teaspoons honey
1 teaspoon chili powder
1 teaspoon cumin powder
Seasoning to taste
Instructions:
Place the black beans, corn, red onion, red bell pepper, avocado and jalapeno in a large bowl.
In a small bowl, whisk together the cilantro, olive oil, lime juice, honey, chili powder, cumin and seasoning
Pour the dressing over the beans and vegetables and toss gently to coat. Serve
Mrs. Calabash notes: if using avocado, add just before serving, because otherwise it will turn brown.
Sazon Seasoning
A must for all Latin dishes, adds that special something.
Ingredients: 1 ½ teaspoon equals 1 pk of commercial mix
1 tablsp ( 15ml) ground coriander
1 tablsp ( 15ml) ground cumin
1 tablsp ( 15ml) turmeric
1 tablsp ( 15ml) garlic powder
1 tablsp ( 15ml) sea salt
2 teasp (10ml) dried oregano
1 teasp (5ml) ground black pepper
Instructions:
Combine all ingredients and mix well.
Store in an airtight container out of direct sunlight.
