Easy No Bake Mango Cheesecake
The mago cheesecake recipe (15cm round pan)
* Cookie Base
80g cookies (3oz)
40g melted butter (3 tbsp)
* Cream cheese filling
200g cream cheese (7oz)
50g sugar (4 tbsp)
1 tsp vanilla extract
50g yogurt (3.5 tbsp)
150g mango puree (1 cup)
2 tsp gelatine (6g)
2 tbsp cold water
bloom 5 minutes and microwave 15 seconds
100ml heavy cream (1/2 cup)
20g sugar (1.5 tbsp)
* Mango jelly
1.5 tsp powdered gelatine (4g)
60ml cold water (4 tbsp)
12g sugar (1 tbsp)
120g mango puree (3/4 cup)

Pineapple Fluff Fruit Dip! Perfect Spring Break Snack! Noreen's Kitchen
Greetings! Spring break is here and for most of us that means the kids are home from school this week. My girls are bit older and fend for themselves. I seldom hear them complaining that they are bored or that they want something to eat. They know where the food is if they want it and they pretty much occupy themselves these days.
There are those times when my girls and Rick and myself included want something fun and delicious to much on. This fruit dip is a perfect answer. It makes a lot and can be used as a party treat or as a dip and go snack right out of the fridge. We love to dip Nilla wafers, honey grahams and fresh strawberries in this dip.
You could also pile this into a prepared baked pastry pie crust or a graham cracker crust for a wonderful cold or even frozen pie! I sometimes like to use this as a filling for store bought pound cake, cut int layers and chilled for a bit. Then slice and serve with some fresh fruit to garnish.
No matter how you choose to use this dip you are going to love it for its flavor and versatility and the ability it has to hit just the right spot when it comes to a great snack.

1/4 c : Brown Sugar; Packed
1 3/4 c : Crispy Rice Cereal Crumbs
1 c : Powdered Sugar; Sifted
8 oz : Fat-free Cream Cheese;
8 oz : Crushed Pineapple; Undrained
6 tb : Corn Syrup
1 c : Cool Whip Free; Thawed

Betty demonstrates how to make her lovely and elegant Pineapple Cloud Tropical Fruit Salad recipe. It is great for dinner parties, and can serve as a salad or as a dessert!

Pineapple Cloud Tropical Fruit Salad
20 oz. can pineapple chunks, drained (Save juice!)
11 oz. can drained mandarin oranges
10 oz. bottle drained maraschino cherries
1 /2 cup miniature marshmallows
3/4 cup pineapple juice (from the saved, drained pineapple)
1/2 cup sugar
2 tablespoons flour
2 well-beaten eggs
1/2 pint whipping cream, chilled along with mixing bowl and beater in the freezer for 1 hour
Drain the pineapple chunks, and save 3/4 cup pineapple juice from the can. Place the pineapple chunks in a medium-sized bowl. Drain the mandarin oranges, discard the juice, and place in the bowl with the pineapple chunks. Drain the maraschino cherries, discard the juice, and place at least half of the jar (as much as you like) in the bowl with the pineapple and oranges. Cover the fruit with plastic wrap and refrigerate for about 4 hours. Now, place 1/2 cup sugar in a saucepan and add 2 tablespoons flour. Mix together thoroughly. Add the reserved 3/4 cup of pineapple juice and stir until all flour lumps are dissolved. Next, add 2 well-beaten eggs, and combine this pineapple pudding mixture thoroughly. Place the pineapple pudding mixture over medium heat and bring to a boil, stirring constantly. Turn the heat to low, and continue to cook for about 4 to 5 minutes, until it is a nice, smooth, cooked pudding. Remove from heat, let it sit for a few minutes to cool, and then cover it with aluminum foil, and refrigerate for about 4 hours. About 1 hour before you assemble your salad, place 1/2 pint whipping cream in the freezer, along with a large mixing bowl and beaters. When very cold, and the whipping cream is beginning to get ice crystals on the edges, place the whipping cream in the cold mixing bowl and beat with the cold beaters until the whipped cream hold its shape. Fold the whipped cream into the chilled pineapple pudding. Drain any juice that has sunk to the bottom of the bowl of fruit, and add 1 1/2 cups miniature marshmallows to the bowl of fruit. Now, gently combine the pineapple/whipped cream mixture with the fruit and marshmallow mixture. Mix gently and thoroughly, and spoon into a pretty, clear bowl. Cover with plastic wrap and chill until serving. Beautiful!!!
