How To make Pinto Bean Loaf
3 c Pinto Beans, cooked/mashed
1 c Tomato sauce
1 c Bread crumbs, finely ground
1/4 c Minced onion
1/4 c Quick oatmeal
3 ts Egg replacer mixed with
4 tb Water, beat til frothy
Fresh ground pepper to taste 1/4 c Catsup or barbeque sauce
Preheat oven to 350 degrees. Combine all ingredients, except catsup, in a large bowl. Mix well. Turn into a non-stick loaf pan, 9-1/4 x 5-1/4 x 3, and flatten. Spread catsup or BBQ sauce over the top. Bake for 45 minutes. NOTE: Makes a good sandwich spread when cold.

Chickpea Veggie Loaf with spices and a spicy bbq glaze. Chickpea Cannellini bean Vegan Meatloaf for Thanksgiving and the holidays or any time. Easy and delicious. Vegan Recipe. Nut-free, Soy-free, Can be gluten-free.
Cook some veggies. Pulse the chickpeas and beans, add spices, shape and bake. You can also shape the mixture into fat balls or patties and bake. Use your favorite glaze or my spicy bbq sauce glaze. Serve with cranberry sauce or gravy, some mashed potatoes, other sides and the menu is done! I used up some leftover slices in tacos with guacamole and sprinkled with chipotle pepper.

Instant Pot Ranch Style Pinto Beans Recipe
1 lb dried pinto beans
3 cups vegetable broth
3 cups water
½ cup tomato puree
1 Tbsp chili powder
2 tsp onion powder
2 tsp garlic powder
1 tsp brown sugar
1 tsp apple cider vinegar
1 tsp paprika
1 tsp cumin
1/2 tsp oregano
1 jalapeno, stemmed and finely chopped optional
2-3 drops liquid smoke optional
pepper to taste
chopped cilantro, for garnish
Instructions
Rinse dried beans and place in the Instant Pot. Add broth, water, tomato puree and all seasonings (all remaining ingredients). Lock lid and set pressure release to sealing. Select Manual high pressure setting and set time to 35 minutes. Allow pressure to naturally release after cooking . Plate up and top with some cilantro.

Traditional Bean Bread Demonstration
Cherokee Nation’s Public Health of Sequoyah County held a traditional bean bread demonstration on Saturday February 29th at the Muldrow Community Center. Public health educators use grant money to have classes that contain traditional content in hopes of keeping these traditions alive.
Bean bread made by both eastern and western Cherokees is more like a dumpling
Cherokee bean bread rests on two ingredients fundamental to Native American civilization: corn and beans. This corn-and-bean dumpling is wrapped in hickory leaves before boiling, which is the Eastern band way of cooking and making the patties and dropping them in is usually the way the Western Cherokees make them.
