Potato and Egg Breakfast Casserole
Ingredients:
6 large eggs
1 tablespoon avocado oil
1 small onion, finely chopped
1 green bell pepper, diced
1 medium russet potatoes, diced into small 1/2 inch cubes
Salt and pepper to taste
Instructions:
Preheat oven to 350 degrees Fahrenheit.
Lightly grease a 9x9 casserole dish and set aside.
Heat avocado oil in a skillet. Add onions and cook for about 1 minute. Then add bell pepper and potatoes. Cook for another 4 minutes.
In a small bowl, beat eggs together with salt and pepper and pour into the casserole dish.
Top with onions, peppers and potatoes.
Bake for 35-45 minutes.
Enjoy on a higher carb day!
**This will make a big batch and therefore it is great for meal prep! Be sure to store it in an airtight container in the refrigerator.

Chili pepper flakes, Black pepper
Rice flour 2 tbsp (I use wheat flour)
salt 1 tsp
vegetable oil
Cheese ~150g

Ingredients and recipe:
Shred 1 potato
Brush oil in the muffin pan
Add the potato in the muffin pan
Add salt and black pepper
Bake for 10 minutes at 350°F/175°C
Crack an egg in each of the potatoes
More salt and black pepper
Parsley
Crushed red pepper
Sprinkle mozzarella cheese on top
Bake for another 10-15 minutes 350°F/175°C
