APPLE CINNAMON DUTCH BABY PANCAKE
Preheat oven to 450 degrees F.
1/2 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup fat-free or low-fat milk
2 large eggs
3 tablespoons butter, divided
1 large Honeycrisp or Gala apple, peeled, cored, and sliced
1 tablespoon sugar
1. Whisk together flour, salt, cinnamon, and nutmeg. Set aside.
2. In a medium bowl; whisk together milk and eggs. Set aside.
3. Heat a 10-inch cast-iron skillet over medium-high heat, about 5 minutes.
4. Toss apple slices and sugar in a small bowl. Melt 1 tablespoon of butter in skillet. Apple apples, sauté until tender, about 5 minutes. Remove apples to a bowl. Wipe skillet until clean.
5. Mix together flour mixture with milk mixture. Add 1 tablespoon of melted butter. Whisk until well blended.
6. Melt 1 tablespoon of butter in skillet. Add pancake batter. Arrange sauté apple evenly on top on batter.
7. Bake for 20 minutes, on the middle rack, until golden in color and puffy.
8. Transfer to serving plate. Serve with powdered sugar, syrup, whipped cream, etc., if desired.

1 cup milk at room temperature
3 large eggs at room temperature
1/2 cup all-purpose flour
1 tbsp sugar
1/4 tsp salt
Mix milk & eggs in blender then add dry ingredients and mix till smooth, let batter rest in blender for 20-30 minutes
3-4 (4 cups) medium size apples sliced into 1/2 inch slices
4 tbsp clarified butter
1 tbsp fresh lemon juice
1 tsp vanilla extract
1 tbsp sugar
Preheat oven to 425F
Fry apples, butter, lemon juice & sugar in a 10-12 inch oven proof frying pan until all liquid evaporates and only butter remains. Pour batter over apples and bake in 425F oven for 20 minutes or until puffed and golden brown.

It’s apple picking season on Delmarva and we have some beautiful ones in the DelmarvaLife Kitchen. Chief of Community Relations with the Delaware Department of Agriculture‘s Delaware Grown program, Stacey Hofmann shows us how to make a Puffy Apple Pancake.
Puffy Apple Pancake
Ingredients
2 Tbsp butter
2 Tbsp brown sugar
½ tsp ground cinnamon
1 medium apple (Gala, Fuji), cored, peeled, sliced
2 large eggs
½ cup milk
¼ tsp salt
Directions
Preheat oven to 400°F. Melt butter in a 9-inch pie plate.
Remove from oven, brush butter on sides of pie plate. Sprinkle brown sugar and cinnamon on bottom of pie plate. Arrange thinly sliced apples over sugar.
In a bowl, whisk together eggs, milk, and salt. Pour over apples.
Bake for 30-35 minutes or until puffy and deep golden brown.
Remove from oven and immediately loosen edge of pancake. Turn upside down on to plate.
Handling & Storage
Apples should feel firm to the touch and be free of bruises.
Place apples in a plastic bag and refrigerate in the crisper for up to a month.
Do not peel or slice an apple until ready to use or it will begin to brown. Dip slices into lemon juice to slow down the browning process.
