Recipe Ingredients:
2 cups gluten free flour (I used Bob’s Red Mill gluten free 1 to 1 baking blend)
2 tsp baking powder
1 tsp baking soda
¼ tsp salt
1 ½ cups brown sugar
½ cup butter, melted and cooled
2 eggs, at room temperature
1 ½ cups pumpkin puree
1 tsp vanilla
1 tsp pumpkin pie spice
1 cup finely chopped walnuts

????INGREDIENTS:
◾️1 cup self-rising flour
◾️1/2 tsp baking powder
◾️1/2 tsp cinnamon
◾️1/4 tsp nutmeg
◾️1/2 tsp pumpkin spice
◾️1 cups granulated sugar
◾️1/2 cup vegetable oil
◾️2 eggs, room temp
◾️1/2 a 15 oz can pumpkin puree (about 7-8 ounces)
Bake at 350 degrees for 45-50 minutes or until toothpick comes out clean

Pumpkin Bread Recipe
Pumpkin Bread Ingredients:
2 cups all purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
8 tablespoons unsalted butter, plus more for pan
1/2 cup sugar
1 cup 100% pumpkin
2 large eggs
1 teaspoon vanilla extract
1 teaspoon pumpkin pie spice mix
1/2 teaspoon cinnamon
2/3 cup buttermilk
Streusel Topping Ingredients:
1/2 cup brown sugar, divided
4 tablespoon butter, melted
1/3 cup all purpose flour
3/4 cup chopped pecans (more or less to taste)
How We Make It:
Please refer to the video for specific how-to instructions
*Butter a 9x5 loaf pan and line with Parchment paper
*Prepare struesel by combining 1/4 cup brown sugar, butter and flour
chill in refregerator while preparing Bread Recipe
*Preheat oven to 350 degrees Fahrenheit
*Whisk flour, baking soda, cinnamon, pumpkin pie spice, and salt and set aside
*Combine butter, sugar, pumpkin, eggs and vanilla
*Add sugar/pumpkin mixture to dry ingredients and mix well
*Stir in buttermilk
*Remove topping from refrigerator and stir in remaining brown sugar and pecans
*Sprinkle topping mixture on top of Pumpkin Bread and gently press it down with a fork
*Bake in a preheated 350 degree oven for 60-65 minutes or until wooded screwer can be
insterted and comes out clean.
Pumpkin Nut Bread
I make a delicious and autumn Pumpkin Nut bread that can be whipped up in no time flat! This recipe can also be converted to a vegan recipe. Insructions are included. Enjoy!
RECIPE:
1 1/2 cup flour
1/2 cup canned pumpkin
2 teaspoons pumpkin pie spice
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cup sugar
1/2 cup vegetable oil
1 teaspoon vanilla (I hit on the hard side of one teaspoon!)
2 eggs **(2 flax seed eggs can be substituted) See recipe below
1/2 cup walnuts, chopped
**If going vegan, add 1 tablespoon apple cider vinegar
Preheat oven to 350 degrees. Oil a 9x5 loaf pan.
Reserve two tablespoons of flour and toss it with the chopped walnuts.
Mix together flour, soda, salt, baking powder and pumpkin pie spice. Set aside.
Mix together pumpkin, sugar, oil, vanilla and eggs. Add the apple cider vinegar at this time.
Add flour mixture. Mix well. Add nuts and combine. Do not over-mix.
Pour into prepared loaf pan. Bake for approximately 60 minutes. Check on loaf after 50 minutes. And watch for the clean toothpick test. Remove from oven. Let loaf sit for 10 minutes. Turn out onto a cooling rack. Serve! Delicious!
** Flax seed eggs: For each egg, use one tablespoon flax seed meal and 3 tablespoons water. Mix well and let sit for about 10 minutes to allow this mix to become like a slurry.

Dry Ingredients:
1-1/2 cups all purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt or a pinch
1 tbsp. pumpkin pie spice (make your own by combining cinnamon, all-spice, cloves, nutmeg, and ginger)
Wet Ingredients:
1/2 cup olive oil - coconut oil, or canola oil work well too
1 cup granulated sugar - you can use 1/2 cup light brown, and 1/2 cup regular sugar
1 tsp. vanilla extract
(1) 15 oz. can of pumpkin puree (you can make your own at home using fresh pumpkin too)
3 eggs at room temperature
Homemade Pumpkin Pie Spice
3 tbsp ground cinnamon
2 tsp ground ginger
2 tsp ground nutmeg
1 tsp ground allspice
1 tsp ground cloves
Mix them all up and you have your own pumpkin pie spice
