How To make Red Pepper Soup with Grilled Shrimp
1 pound shrimp
fresh or frozen
:
in shells 4 teaspoons olive oil
1/4 teaspoon greek seasoning or dried oregano
:
crushed 1 teaspoon butter
3 medium red sweet peppers cut up
1 medium onion :
chopped
6 cloves garlic minced
1 large potato :
peeled and cut into
cubes 1 14 1/2 ounce chicken broth
1/8 teaspoon greek seasoning :
or dried oregano
-- crushed 3/4 cup 1% lowfat milk
1/4 cup shredded parmesan cheese
Thaw shrimp, if frozen. Peel and devein shrimp; rinse and pat dry with paper t owels. In large skillet heat 2 teaspoons of the olive oil over medium heat. A dd shrimp and the 1/4 teaspoon Greek seasoning. Cook, stirring often, for 2 to 3 minutes or until shrimp turn pink. Remove from skillet. Keep warm.
Add butter and remaining olive oil to skillet. Cook peppers, onion, and garlic in hot oil mixture for 3 minutes. Add potato, broth, and the 1/8 teaspoon Gre ek seasoning. Bring to boiling; reduce heat. Cover; simmer for 10 to 15 minut es or until potato is tender, stirring occasionally.
Cool slightly; pour into a food processor bowl or blender container. Cover and process or blend until smooth (do in batches, if necessary). Return to skille t. Stir in the 1% lowfat milk; heat through. Ladle into bowls. Top with shri mp and sprinkle with Parmesan cheese. Makes 8 to 10 servings.

Shrimp in a Creamy Roasted Red Pepper Sauce/ Low-Carb Recipe

Serves 4:
1 pound peeled and deveined shrimp
3-4 tablespoons olive oil
Salta and pepper to taste
2-3 tablespoons butter
1 small onion, finely chopped
2 garlic cloves, grated
12-ounce jar roasted red peppers, drained
1 tablespoon sundried tomatoes packed in oil
¾-1 cup heavy whipping cream
½ teaspoon smoked paprika
Pinch of crushed red pepper flakes
4 ounces feta cheese, crumbled
2 tablespoons finely sliced scallions
Shredded parmesan to garnish
Fresh basil leaves as garnish
Season the shrimp lightly with salt and pepper on both sides.
Heat a pot over medium high heat and add the olive oil. Place the shrimp in an even layer inside the pot. Cook for 3-4 minutes or until pink all around. If shrimp are overcrowding the pot sear them in 2 batches. Take the shrimp out and set in a plate.
Reduce the heat to low and add the onions along with the butter and a pinch of salt. Cook until soft and golden. 6-8 minutes. If onions begin to brown too fast add ½ cup of water to the pot and cook until the water evaporates, and the onions have softened.
Puree the roasted red peppers with the sundried tomatoes until smooth.
Add garlic and warm through 30-40 seconds.
Add pureed peppers along with the heavy cream and paprika. Season with salt and the red pepper flakes.
Bring to a boil and reduce the heat to medium-low and cook until the sauce thickens. About 5 minutes. Taste and adjust seasoning if needed.
Add the crumbled feta along with the shrimp and warm the shrimp through 4- 5 minutes or until fully cooked.
Garnish with scallions and basil and serve over zoodles or pasta.

Creamy garlic parm shrimp
Serves 2
3-4 Table spoons neutral oil (Grape seed or sunflower oil)
1 lb Peeled deveined shrimp size 8-12
2 Tablespoons Salted butter
1 Tablespoon minced garlic
1/4 cup white wine (Chardonay)
1/2 cup Heavy cream
1/2 cup Grated parmesan cheese
Salt & Black Pepper to taste
Optional Garnish: Chopped parsley & Chili flakes
1. Add oil to a pan on medium heat.
2. Season the shrimp with salt and black pepper. Make sure to get both sides.
3. When the oil is hot, carefully add the shrimp. Cook each side for 2 minutes. When they’re done remove and reserve.
4. Discard any excess oil. Turn the heat down to medium low. Add the butter and let it melt.
5. Next add minced garlic. Fry until its fragrant or turns a light blonde color (about 1-2 minutes).
6. After that add the wine and let it reduce.
7. When the wine is almost dry combine the heavy cream, parmesan cheese and continue to reduce.
8. When the sauce is at your desired consisgtency season with salt to taste.
9. Finish with the chopped parsley and the cooked shrimp from earlier.
10. Serve hot with more chopped parsley and red pepper flakes.
