How To make Scallops, Spa Pasta
1 1/2 cups water
2 tablespoons shallots
sliced
1/2 tablespoon tarragon :
chopped
dash white pepper dash nutmeg 1 bunch asparagus
1/4 cup dry white wine
1 tablespoon dijon mustard
2 tablespoons cream cheese, fat-free
1 teaspoon lime juice
1 pound linguini
12 large sea scallops, whole
2 tablespoons chives -- chopped
Combine water, shallots, tarragon, pepper and nutmeg in saucepan. Bring to boil over medium heat. Add asparagus stems. Cook 2 minutes. Add asparagus tops and wine, cooking until tender. Remove asparagus tops, slice into small rounds and reserve. In food processor combine contents of saucepan with mustard, cream cheese and lime juice. Blend until smooth. Strain through cheesecloth or metal strainer. (Sauce can be prepared in advance to this point).
Cook pasta until al dente. Drain well. return sauce to pan. Add scallops (cut into thirds) and simmer over medium heat 30-45 seconds. Be careful not to overcook. Add pasta and asparagus tips to sauce. Toss lightly. Garnish with chives.

Ingredients:
300g Pasta of your choice
2 tablespoons Olive oil
2 tablespoons Butter
1 Onion, chopped
3 Garlic cloves, crushed
1kg (35oz) Cherry tomatoes/regular tomatoes
1¼ cups (300ml) Cream
3-4 Basil leaves, Chopped
1/3 cup (30g) Parmesan cheese, grated
Salt to taste
Pepper to taste
Directions:
1. Heat olive oil and butter in a large skillet over medium heat. Add onion and sauté for 5-6 minutes, until lightly golden. Add garlic and sauté for 1-2 minutes.
2. Add halved cherry tomatoes or chopped regular tomatoes to the skillet and cook for 10 minutes over heat. Reduce the heat to medium-low, cook for 50 minutes, stirring occasionally, keep the lid on.
3. If the mixture is too thick, add 1/4 cup of water.
4. When the sauce is almost ready: fill a large pot with water and add 1 tablespoon of salt. Bring to a boil. When boiling add the pasta and cook to al dente according to package directions.
5. While pasta is cooking: To the sauce add cream, chopped basil, parmesan cheese, salt and pepper. Stir and cook for 3-4 minutes.
6. Add drain pasta to the sauce, turn the heat off and toss.
7. Serve!
