Ingredients:-
1/3 cup whole chia seeds
1/3 cup sesame seed
1/3 cup pumpkin seeds
½ cup flax seed
1/3 cup sun flower seeds
1/8-1/4 tsp salt or to taste
1 cup water
Note: You can add nuts of your choice and also herbs and spices.

Steps:-
1-Mix all the ingredients listed above. Cover and let all the seeds especially chia and flax seeds absorb most of the water. The mixture will become kind of slimy. Rest for about 2-4 hours outside. I didn’t have time to bake them in the same day so I put them in the fridge overnight and bake them the next day. Flax and chia seed will act like a glue.
3-Spread the mixture out with a spatula on a baking sheet lined up with parchment paper. The thickness is about ¼ inch or less as per your liking.
3-Bake in preheat oven at 325-350 F for about 30-40 minutes.
4- Remove from oven and slice into any shape you like. If they are sticky and hard to flip them so put them back in the oven for about 10-15 minutes.
5-Carefully flip the crackers over and put them back in the oven for about another 30 minutes or until they are crispy.
6-Store them in tight lid container when they are cold.
7-Enjoy them with hummus, baba ganoush, cream cheese, butter, peanut butter and many more things.

Twisted Sesame Crackers (炸麻叶) is one of those traditional new year snacks. It is very easy to make but I do like to make it ahead of time because it stays good for months and you can put it out to serve right away.

INGREDIENTS
360 g 12.7 oz of all-purpose flour (Amazon Link -
1.5 tsp of salt
1.5 tsp of sugar
1.5 tsp of garlic powder (Amazon Link -

1/2 tsp of black pepper or to taste (Amazon Link -
30 g 2 tbsp +1 tspof vegetable oil
140-150 g (5-5.3 oz) of water
5 g (1.5 tsp) of black sesame seed (Amazon Link -
2 tbsp of diced scallion
INSTRUCTIONS
Add the all-purpose flour, salt, sugar, garlic powder, onion powder, and black pepper into a food processor.
Turn the speed on medium and drizzle in 30 grams of vegetable oil as it is mixing. The oil will coat some of the proteins and prevent them from contacting water, which reduces gluten formation. That will give you an extra crispy and flaky result.
Switch the speed to low, and add the water slowly. Then add the sesame seeds and the diced scallion. Continue to mix with the low speed until everything forms into a rough dough.
Roll the dough into a 1 mm thick smooth sheet. Sprinkle some cornstarch to prevent sticking. You can do this by hand or use a pasta roller.
Cut the sheet into 3 inches wide rectangles. Pair every 2 rectangles together and fold them in half lengthwise. Use a sharp knife and divide the folded sheets into 2/3 of an inch wide pieces. Use the tip of the knife and cut the dough pieces halfway.
Unfold them. Push one side through the middle hole and pull them out. That is the shape of a twisted cracker, even though it is 2 pieces together. Continue to finish the rest.
Bring the oil to 360° f and fry the crackers for 4-5 minutes or until golden brown.
You can store them in a sealed container and they will stay good at room temperature for a couple of months. Besides enjoying it as is, you can also crush and sprinkle it onto wonton soup, congee. I like to put it in my Jian bing, which is a type of breakfast wrap in Shang dong province. It just creates some contracting texture and makes your meal extra delicious.

Homemade Cheese Crackers
Servings: 6-8
INGREDIENTS
8 ounces shredded cheddar cheese
4 tablespoons unsalted butter, room temperature
1 teaspoon salt
1 cup flour
2 to 3 tablespoons ice water
PREPARATION
1. Preheat oven to 350˚F/180˚C
2. Using a hand mixer or standing mixer, combine cheese, butter, and salt in a large bowl.
3. Once combined, mix in the flour and add the ice water one tablespoon at a time. The dough should hold together but crumble apart if you break it up in your hand. If it seems too dry, add a little more ice water.
4. Separate dough into two halves and pack together into discs. Wrap in parchment paper and chill in the refrigerator for 30 minutes.
5. Roll out dough to ⅛ of an inch, pinching the cracks on the ends.
6. Cut into 1 inch x 1 inch squares and pierce a hole in the middle of each square for ventilation during baking.
7. Place the separated crackers on a parchment paper-lined baking sheet. Bake for 13 minutes, or until golden brown.
8. Enjoy!

Sesame & Chia Crackers Recipe | Go Delicious
Crispy, tasty, guilt-free sesame and chia seeds crackers made at home, what can be better than that? No artificial anything, no secret ingredients, but still better than the ones from the supermarkets. Sounds almost impossible? Well it isn’t. It’s a fail proof recipe that I am so happy to share.
Here are the ingredients:
2 cups flour
1 tsp. baking powder
1 tsp. salt
1/3 cup chia seeds
1/3 cup sesame seeds
1/2 cup shredded Parmesan (for a dairy-free version, simply leave it out)
3/4 cup of warm water
3 tbsp. vegetable oil
1 egg white to brush
Sprinkle of sesame seed and flax seed, for additional crunch
To make the dough simply mix all dry ingredients in a mixing bowl, and add the water bit by bit, mixing with a fork. Add the vegetable oil a tablespoon at a time, and knead the dough for a minute or two, just until all the ingredients are well combined and you are left with nice dough.
Cut the dough in two.
Roll half of the dough on a parchment paper to prevent it from sticking on the table. This will also make the transferring from the table to the baking tin fast and easy. Roll it thin, as this as you can, then brush it with the egg white and sprinkle sesame and flax seed on top to make it extra crunchy. Of course you can use other seeds instead, it is a very versatile recipe, I chose sesame and chia because that’s what I prefer and always have on hand.
Bake in a 200C preheated oven for up to 15 minutes or until golden on top.
