Easy Sesame Crackers Recipe

Twisted Sesame Crackers (炸麻叶) is one of those traditional new year snacks. It is very easy to make but I do like to make it ahead of time because it stays good for months and you can put it out to serve right away.

INGREDIENTS
360 g 12.7 oz of all-purpose flour (Amazon Link -
1.5 tsp of salt
1.5 tsp of sugar
1.5 tsp of garlic powder (Amazon Link -

1/2 tsp of black pepper or to taste (Amazon Link -
30 g 2 tbsp +1 tspof vegetable oil
140-150 g (5-5.3 oz) of water
5 g (1.5 tsp) of black sesame seed (Amazon Link -
2 tbsp of diced scallion
INSTRUCTIONS
Add the all-purpose flour, salt, sugar, garlic powder, onion powder, and black pepper into a food processor.
Turn the speed on medium and drizzle in 30 grams of vegetable oil as it is mixing. The oil will coat some of the proteins and prevent them from contacting water, which reduces gluten formation. That will give you an extra crispy and flaky result.
Switch the speed to low, and add the water slowly. Then add the sesame seeds and the diced scallion. Continue to mix with the low speed until everything forms into a rough dough.
Roll the dough into a 1 mm thick smooth sheet. Sprinkle some cornstarch to prevent sticking. You can do this by hand or use a pasta roller.
Cut the sheet into 3 inches wide rectangles. Pair every 2 rectangles together and fold them in half lengthwise. Use a sharp knife and divide the folded sheets into 2/3 of an inch wide pieces. Use the tip of the knife and cut the dough pieces halfway.
Unfold them. Push one side through the middle hole and pull them out. That is the shape of a twisted cracker, even though it is 2 pieces together. Continue to finish the rest.
Bring the oil to 360° f and fry the crackers for 4-5 minutes or until golden brown.
You can store them in a sealed container and they will stay good at room temperature for a couple of months. Besides enjoying it as is, you can also crush and sprinkle it onto wonton soup, congee. I like to put it in my Jian bing, which is a type of breakfast wrap in Shang dong province. It just creates some contracting texture and makes your meal extra delicious.

Sesame ball (煎堆)- How to make perfect Jian Dui at home
Sesame ball (Jian dui / 麻团 /煎堆 / 芝麻球) is a well-known fried Chinese pastry made from glutinous rice flour. This delectable dessert is coated with sesame seeds on the outside which are crisp and chewy. It encases a sweetened filling consisting of red bean paste, peanut paste, or lotus paste. Cheese and chocolate are some more innovative filling for these same balls.
I am making the sesame balls with my favorite peanut paste filling, which happens to be the most popular variant here. This variant is widely available in street food stores and another famous snack called youtiao.
Let’s get started.

Ingredients:
100ml hot water
40g sugar
140g glutinous rice flour
1/4 bowl of white sesame seeds
75g crushed peanuts
30g smooth peanut butter
2 tbsp honey
Method:
- Dissolve the sugar in hot water to make a syrup. Add the warm syrup to the glutinous rice flour and knead it into the dough.
- Once the dough is soft and malleable, divide it into portions of 25g each.
- Smoothen them by rolling them between your palms and covering them at all times to prevent them from drying.
- Mixed the crushed peanuts, smooth peanut butter, and honey to form the peanut paste as the filling. Divide the filling to 13g each.
- Roll a portion of the dough between your palm to make it spherical. If you find it too dry, wet one of your palms with some water before rolling it.
- Make a dent at the center of the dough, then continue pinching with your fingers to shape it like a tiny teacup.
- Place one ball of filling inside the ‘teacup.’
- Wet the edge of the dough and pinch and seal the dough. Roll it between the palms until the seam is no longer noticeable.
- Deep the dough into water, shake off the excess. Transfer into a bed of white sesame seeds in a bowl and cover the surface thoroughly.
- Press the sesame ball lightly to ensure all the sesame seeds have adhered to the surface firmly.
- Heat the oil to 120°C/250°F. Deep-fry the sesame balls for 4 minutes until they start to float to the top. Stir to avoid sticking.
- Use a slotted spoon or wire mesh strainer to press them down lightly to submerge them in the oil, for about six to eight minutes until they expand to the maximum size.
- Turn the heat to 170°C/335°F. Deep-fry another two to four minutes until they become golden.
- Place them on a paper towel to absorb the excess oil. Serve.
