How To make Sharon's Minestrone
2 tb Vegetable oil
1 c Chopped onion
2 Garlic cloves, finely
-chopped 6 Bacon slices
1 c Chopped celery
1 c Chopped carrots
2 c Beef stock
1 c Tomato juice
1 (14oz) can kidney beans,
-drained 2 ts Basil
1/2 ts Oregano
1 c Barley
2 tb Chopped parsley
salt and pepper to taste In a large saucepan, saute onions and garlic in vegetable oil. In a small frying pan, cook bacon, drain off fat and cut bacon into small pieces. (To save a step, I cut the bacon into bite size chunks first and then cook them in the same pot that the soup is going to be in. Gives it a bit more flavour. Just drain off excess fat.) To the saucepans,add bacon, celery, carrots, beef stock and tomato juice; cook until vegetables are just tender, about 10 minutes. Ingredients:
¼ tube tomato puree
olive oil for frying
1 onion (160g/1 Cup)
1 large carrot (170g/2 Cups)
45g (1/2 Cup) sugar snap peas
2 large spring onion (20g/1/3 Cup)
50g (1/3 Cup) red lentils from packet
2 tins of chopped tomatoes
1 stock cube
50g (4 tbsp) butter
70g (1/2 Cup) tinned kidney beans
75g (1/2 Cup) tinned black beans
130g (1 Cup) tinned green lentils
1 can of chick peas
4 cloves garlic
½ tsp salt
½ tsp pepper
½ tsp turmeric
½ tsp paprika
½ tsp chilli flakes (1 for hotter)
¼ tsp cayenne pepper (1/2 for hotter)
½ thyme
2 tsp basil
1 tbsp parsley

This Spinach and Tomato Soup is a really healthy recipe and it so easy to make.
Suitable for freezing.
Spinach and Tomato soup is full of goodness and if you want a spicy version then you add the Cayenne Pepper.
If you don't want the spicy version of the Spinach and Tomato Soup then just leave out the Cayenne Pepper.

Ingredients for Spinach and Tomato Soup (Large Pot):
350 g Spinach
10 g Butter
1 Large Onion
2 Cloves Garlic
Black Papper
2 tsp Dried Basil and handful of Fresh Basil
1 tsp Dried Parsley
1 tsp Dried Ground Ginger
1 tsp Oregano
1/4 tsp Cayenne Pepper (If you want SPICY VERSION)
Salt
2 Tins Chopped Tomatoes
1 Litre Water
5 Fresh Plumb Tomatoes
1 Vegetable Stock Cube

Souper-Hero Minestrone
Ingredients:
1 onion
1 carrot
1 celery stick
1 small courgette
1 garlic clove
1 tbsp sunflower oil
150g diced pancetta or bacon lardons
600ml chicken or vegetable stock
400g can chopped tomatoes
400g can chick-peas
50g small dried pasta shapes (or 25g if really tiny)
50g spinach
Large handful fresh basil leaves, optional
25g finely grated parmesan
Sea salt and freshly ground black pepper
Method:
1. Finely chop the onion, carrot, celery and courgette and crush the garlic. Heat the oil in a large pan on a medium heat and saute the prepared vegetables and pancetta for 4-5 minutes until beginning to soften and catch colour.
2. Add the stock, tomatoes, chick-peas, pasta and seasoning to the soup and bring to the boil. Reduce to simmer for about 10 minutes or until the pasta and vegetables are tender.
3. Meanwhile, roughly chop the spinach and then stir it in last minute with almost all of the basil (if using) until just wilted and remove from the heat.
4. Serve straight away garnished with the remaining basil (if using) and a little parmesan if liked.
