Easy Creamy Chicken Spaghetti | The Recipe Rebel

Ingredients
▢2 tablespoons oil
▢1 small onion (chopped)
▢½ red pepper
▢½ green pepper
▢2 boneless skinless chicken breasts (about 1 lb – cubed)
▢1 tablespoon freshly minced garlic
▢¾ teaspoon salt
▢½ teaspoon chili powder
▢½ teaspoon paprika
▢3 tablespoons all purpose flour
▢1½ cups low sodium chicken broth
▢1 cup milk or cream (any will do! Higher fat will have a richer flavor)
▢1 cup shredded cheddar cheese
▢375 grams spaghetti (about ¾ pound)
Instructions
Cook spaghetti noodles in a large pot of boiling salted water until al dente. Drain.
Meanwhile, heat a large skillet over medium-high heat and add the oil.
Add onions and peppers, cooking and stirring until softened, about 3-4 minutes.
Add chicken breast cubes and cook until white on the outside (they don't necessarily need to brown.
Stir in garlic, salt, chili powder and paprika and cook 1 minute.
Add flour and stir until no white remains.
Stir in broth and milk and bring to a simmer. Reduce heat to medium and cook and simmer until thickened. Stir in shredded cheese and pour over cooked pasta.

As with numerous Italian chicken dishes, they were originally intended for veal but taste equally as good with chicken. But back to the name, why an American Italian dish is called “French”, maybe it’s because of all the butter, maybe the wine, but one thing for sure, the flavours are superb! Enjoy it with a rich and dry white wine such as Sauvignon Blanc or Chardonnay, or even a light red such as Gamay or Pinot Noir. Ingredients for Lemon Pepper Chicken:
- Chicken, large pieces with bones- 500 gms
For Marination:
- Salt- 1 tsp
- Crushed Pepper- 1 tsp (coarse granules)
- Lemon Juice- 2 tsp
- Thick whisked curd/yogurt- 2 tbsp
- Ginger Garlic Paste- 1.5 tsp
Whole Spices:
- Green Cardamom- 3
- Cloves-3
- Cinnamon- 2
- Black Peppercorns- 10
Other Ingredients:
- Whisked curd/plain yogurt- 4 tbsp
- Crushed Pepper- 1/4 tsp
- Green Chillies, slit- 4
- Garam Masala Powder- 1/4 tsp
- Oil- 3 tbsp
- Butter- a dollop (1 tbsp)
- Coriander leaves, finely chopped- 1 tbsp
Preparation:
- Crush the black peppercorns.
- Marinate the chicken pieces with items indicated. Mix & set aside for 1 hr.
- Whisk the curd/yogurt.
- Slit the green chillies and fine chop the coriander leaves.
Process:
- Heat oil & butter in a flat pan and add the whole spices.
- Once it splutters, add the marinated chicken & fry on high heat for 1 min and then flip the chicken pieces.
- Continue to fry for 2-3 more mins on high turning the pieces a few times.
- Add the balance marinade and continue to fry on both sides for another 5 mins on medium heat till evenly browned.
- Now reduce the heat to low, add the whisked curd/plain yogurt, 1/4 tsp crushed Pepper, slit green chillies and mix everything well.
- Cover & cook on low heat for 15 mins, flipping and stirring after 10 mins. Cook till the liquid has nearly dried and the chicken is tender.
- Now add the garam masala powder, mix well and fry for another 5 mins till the chicken pieces are browned.
- Garnish with finely chopped coriander leaves and serve hot.

Really simple recipe, we have used chicken legs ( skin on and bone in ) but you could use any parts you like. Onions, garlic, basil, oregano, marjoram, tomatoes, pasta, olives and salt n pepper. You could if you liked add eggplant, courgette, mushrooms, bell peppers, pesto, carrots, potatoes in fact pretty much any vegetables you liked. Slow cooked, the longer you cook this the better. Wonderful with any type of pasta, penne, spaghetti, rigatoni or with rice, bread or on its own. A great way to cook, so easy and good for a whole family.
