We don't know why anyone would make a pie instead of a crisp! A crisp, most often made using apples, is a better textured, a better flavored and easier to make than a pie. Odds are you’ve had apple crisp before, but you wouldn’t believe what a difference it makes when you add caramel to the dish! It has so much more complexity than granulated sugar and the taste is out of this world. This Caramel Apple Crisp is one of the best Thanksgiving desserts and it’s very simple to make.
This Apple crisp is a dessert made with a streusel topping. An apple crumble is a dessert of baked chopped apples topped with rolled oats and brown sugar. In the UK, Australia, and New Zealand, the term 'crumble' refers to both desserts, but in the United States of America and Canada the two are distinguished.

Ingredients for making caramel apple crisp in a Skillet:
2 cups sugar
1/4 cup water
3/4 cup unsalted butter (1 1/2 sticks)
1 cup heavy cream
3 pounds honeycrisp apples, peeled, sliced
1 tbsp fresh lemon juice
1 tsp ground cinnamon
1/2 tsp ground cardamom
1/8 tsp ground cloves
1/8 tsp allspice
1 cup flour
1 cup old-fashioned oats
1/3 cup chopped walnuts
1/3 cup light brown sugar
1/2 tsp kosher salt
1/2 cup grams unsalted butter (1 stick), softened
Instructions for making Skillet Caramel-Apple Crisp:
- First in a pot add your sugar
- Followed by adding your water
- Mix the two together and add your unsalted butter
- Cook everything together until a caramel forms
- Take the pot off the heat and slowly add in your heavy cream
- Whisk everything together until it gets darker
- Now in a large bowl add your apples
- Then add in your lemon juice
- Followed by your ground cinnamon
- And add in your ground cardamom
- Then add in your ground cloves
- And add in your allspice
- Season lightly with salt
- Now add in 1/2 cup of your caramel sauce
- Mix everything together thoroughly
- In a large bowl add your flour
- Followed by your old-fashioned oats
- Now add your chopped walnuts
- Then add in your light brown sugar
- And add your kosher salt to the bowl
- Now mix everything together
- Then add in your unsalted butter
- Mix everything together with your hand
- Now line the bottom of a greased skillet
- Line the bottom with your apples
- Add your oatmeal mixture to the top
- Bake at 350F for 40-50 minutes
- Let cool and your apple crisp is now ready to eat

Caramel Apple Olive Oil Skillet Cake with Salted Caramel Buttercream Frosting
Thanksgiving (and Friendsgiving!) dessert inspiration: Graza Olive Oil's Caramel Apple Olive Oil Skillet Cake. ????
10.25 Signature Skillet in Thyme:
Ingredients:
For apples:
4 Tbsp unsalted butter
2 large Granny Smith Apples peeled, cored & diced
½ cup dark brown sugar
¼ tsp kosher salt
For cake:
½ cup salted butter (1 stick), room temp
1 ⅓ cup dark brown sugar
3 large eggs
1 ½ tsp vanilla extract
1 ⅔ cups all-purpose flour
¾ tsp baking powder
½ tsp fine sea salt
½ tsp ground cinnamon
¼ tsp freshly grated nutmeg
¼ tsp ground clove
2 Tbsp Graza Sizzle Olive Oil
For the frosting:
1/4 cup homemade or store-bought caramel sauce
2 Tbsp Graza Drizzle Olive Oil
Buttercream from any one of your favorite recipes!
Instructions:
1. Make the apples: In a saucepan, melt the butter over medium heat. Add the apples, brown sugar, and salt, and cook, stirring occasionally, until the sugar dissolves and the apples soften a bit, about 5 min. Let cool while making the rest of the recipe.
2. Heat oven to 350F. Grease a 10.25 Signature Skillet with Sizzle olive oil.
3. Make the cake: In the bowl, use an electric mixer to cream the butter and brown sugar until light and fluffy, about 5 min. Add the eggs one at a time, beating well after each one. Scrape the bowl well, then beat in the vanilla and Sizzle Olive Oil.
4. In a medium bowl, whisk the flour, baking powder, salt, cinnamon, nutmeg, & cloves to combine. Add the flour mixture to the mixer and mix just until incorporated. Don’t forget to scrape the sides and fully incorporate!
5. With a rubber spatula, gently fold the apple mixture (including all of the caramel-like liquid in the pan) into the batter. Mix just until fully combined.
6. Pour the batter into the prepared skillet and spread into an even layer. Bake until the surface is evenly golden brown and appears set – a toothpick inserted into the center should have a few moist crumbs clinging to it, 40-45 minutes. Depending on your oven, this time can vary. Keep a close eye! Let cool completely.
7. Make the frosting: After making your favorite buttercream recipe, mix in the caramel sauce using an electric mixer until smooth and fully incorporated. Add the Graza Drizzle Olive oil and mix again until fully combined.
8. Once the cake has cooled, top with the frosting, flaky salt, and some more Drizzle olive oil. Enjoy!

My daughter adapted my standard apple upside down cake to work with vegan baking ingredients like oat milk, cashew butter and applesauce as an egg replacement. It all worked very well yielding a tender cake with a rich buttery flavor.
We used Miyoko's vegan butter which really did a fantastic job. It behaves and tastes like dairy butter in the recipe, we even spread some on toast just to see if it really tastes like butter and it really does!
To give our vegan cake a sweet topping we used Muddy Pond Sorghum Syrup it's similar to molasses but with a milder flavor. You can substitute a wide variety of sweeteners for sorghum. Use maple syrup, brown sugar, cane syrup or sugar in the raw syrup.
