CHOCOLATE PUMPKIN SPICE BREAD
2 cups all-purpose flour 3/4 cup white sugar 3/4 teaspoon salt 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 tbsp homemade pumpkin spice mix 1/2 cup fresh pumpkin, grated 1 cup milk chocolate chips 1 egg 2 tablespoons vegetable oil 3/4 cup orange juice
*DIRECTIONS*
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan. 2. Combine the flour, sugar, salt, baking powder, pumpkin spice mix, chocolate chips and baking soda. 3. Mix together the egg, oil and orange juice. Pour the egg mixture and grated pumpkin into the flour mixture, and stir until blended. Spoon the batter into the prepared pan. 4. Bake for 1 hour in the preheated oven. 5. Remove from oven and cool in pan for 10 minutes, then remove loaf from pan to a wire rack, and cool completely.

Preheat oven to 350*
In a large mixing bowl mix pumpkin, oil, eggs, water and vanilla. Add baking soda, salt, sugar and pumpkin pie spice mixing well. Add 1/2 flour, stir well. Add remaining flour stir well.
Spray 8 mini loaf pans with non stick spray.
Scoop 1 1/2 cups of batter in each pan.
Bake 40-45 minutes until knife comes out clean and top springs back to the touch.
Cool on cooling rack.
Wrap well and place in freezer bags for future use if desired. Store in refrigerator in air tight container for up to a week.
