Welcome back to my kitchen today I’m going to share with you how to make the best albóndigas, Seriously sooooo delicious that you are going to ask for more and the best part is that it is not spicy so even your little ones can enjoy, I’m so excited to share it with you all! Ingredients:
For the meatballs-
2 lbs ground beef I used 93% lean and 7% fat
1 c white rice
2 eggs
1/4 white onion (diced)
1/2 bunch mint or cilantro (diced)
2 tsp minced garlic
2 tsp garlic salt
2 tsp oregano
2 tsp black pepper
For the tomato broth:
5 Roma tomatoes
1/4 white onion
2 garlic cloves
1 tbsp chicken bouillon
1 cube tomato bouillon
1/2 tsp cumin
3 chile chipotles in adobo sauce
6 c water add additional 6 c water to boil
1/2 bunch mint or cilantro
3 potatoes
3 celery sticks
3 whole carrots
You can also add squash and corn ????

6 oz bacon, chopped1 lb Italian Sausage, preferably spicy or hot1 medium head garlic, 6-8 large cloves, peeled and minced 1 medium onion, diced
6 cups chicken broth/stock, (48 oz)4 cups water, (32 oz)5 medium russet potatoes, peeled and chopped into 1/4 thick pieces1 kale bundle, leaves stripped and chopped (6 cups)
2 cups whipping cream
1 Tbsp Italian or garlic and herb seasoning Salt and black pepper to taste
Parmesan cheese to serve, optional

This meatball soup recipe is has a delicious tomato-based broth with meatballs (obviously), Italian seasonings, elbow macaroni , fresh spinach, caramelized onions, and red bell peppers. My family absolutely loved it, especially topped with grated Parmesan cheese, a scoop of ricotta cheese, and a sprinkling of red pepper flakes. The flavors are very approachable — even the kids loved it.
The recipe I made contains a small amount of hot sauce and red pepper flakes, but it wasn’t spicy at all — Just very, very delicious!

½ red bell pepper, diced
3 cloves garlic, minced
2 tablespoons tomato paste
3 cups chicken broth
1 ½ cups beef broth
1 (28 oz.) can crushed tomatoes
1 tsp hot sauce, optional
1 tsp Worcestershire sauce
½ cup heavy cream
2 cups fresh spinach leaves
1 cup dry pasta, I used elbow macaroni
Seasonings
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried parsley
1 teaspoon mustard powder
½ tsp red pepper flakes
Toppings
8 oz. Ricotta cheese
½ cup Parmesan cheese
