Pineapple & Strawberry Cake / Perfect Vanilla Sponge Cake / Yellow Cake By Sara's Haute Cuisine
This Pineapple Cake Recipe is the BEST! With moist,soft & spongy homemade yellow cake layers with a flavorful pineapple & strawberries and whip cream filling.
Ingredients for sponge cake :
6 eggs
Granulated sugar 3/4 cup
All purpose flour 1 cup slightly heaped
Baking powder 1 tsp
Vanilla essence 1 tsp
Yellow food colour few drops
Instructions :
All ingredients should be at room temperature.
Sieve flour & set aside.
Line a 8 cake pan with oil & parchment paper.
Preheat your oven at 180ºC for 15 to 20 minutes.
Beat eggs & sugar until triple in volume.
Add vanilla essence and mix well.
Now stop beater & Fold in flour and baking powder.
Do this step patiently,otherwise the air that is created in it will release and cake will not bake perfectly.
When you have done with flour add colour,mix well and bake for 20 to 25 minutes or until done.
Other ingredients :
Whipped cream 2 to 3 cups
Pineapple juice
Pineapple slices
Strawberry chopped
After baking cool completely on a wire rack then cut into 2 or 3 layers then sandwich these layers with whipping cream & chunks of pineapple & strawberry.
(Moist each layer with pineapple juice)
Then plaster your cake with cream and decorate with pineapple slices and strawberries or according to your choice.

Strawberry Shortcake Cake (Layer Cake Recipe)
Strawberry Shortcake Layer Cake is a fun cake for strawberry season, made with yellow cake, strawberry filling and whipped cream frosting! I'm not a great cake decorator but this was easy to make!
PRINTABLE RECIPE:
INGREDIENTS
1 recipe yellow cake baked in 9” rounds (from my recipe or use a box mix)
1 pound strawberries
1 4 pound tub Wilton decorator icing (medium consistency)* , or 3 cans icing or my homemade buttercream (see note for link)
Wilton Color Right Red optional
8 ounces (225g) cream cheese
1 cup (113g) powdered sugar
1 ½ cups (356ml) cold heavy whipping cream
INSTRUCTIONS
Bake cakes in 9-inch round pans as directed on box or in recipe. Let cool.
Set aside 6-8 strawberries for garnish. Wash, hull, and dice small enough to make 1 cup diced (about 6-8 berries, depending on size).
Place 2 cups of the decorator icing in a medium sized bowl. Stir in the diced berries. Add one drop of red food coloring, if desired.
Place one cake layer on a cake plate. Frost with the strawberry icing. Top with second cake layer. Chill 1 hour.
Using more of the decorator icing, frost the outside and top of the cake with a thin layer. I chose to leave the cake naked on the outside, but you can do a thicker layer of frosting if desired. Chill to set the crumb layer
Make the whipped cream topping: beat cream cheese and sugar with a hand or a stand mixer fitted with the whisk attachment. Scrape the sides and bottom of the bowl, then run the mixer while adding the heavy whipping cream. Beat until stiff peaks form.
Decorate/frost the top and sides of the cake with the whipped cream frosting. I used a Wilton 1M tip to pipe swirls over the top of the cake. Top with berries.
Store in refrigerator for up to 2 days.

Strawberry Cake Filling Recipe ????
Today I’m making a thick strawberry cake filling that is SO easy to make and tastes much better than any pre-made filling that you would buy at the grocery store. It’s super simple to make!
Strawberry Cake Filling
¾ Cup Water
3 Tablespoons Cornstarch
12 oz frozen unsweetened strawberries
¾ Cup Granulated Sugar
1 Tablespoon Lemon Juice
1. Pour water and cornstarch into a medium size sauce pan. Whisk into a slurry.
2. Pour strawberries, sugar and lemon juice into the pan and cook on medium-low for 10-15 minutes until the strawberries have broken down. Use a potato masher to mash the strawberries into a chunky consistency.
3. Once the filling has darkened and thickened up, transfer to a bowl and refrigerate to cool it down completely.
*The filling will last in the refrigerator for about a week. After the cake is filled, store it in the refrigerator. However, you can keep it out at room temperature for a few hours. Enjoy!
