How To make Sweet Pistachio Twists
1/2 c Pistachios; finely chopped
2 tb Honey
1/2 ts Lemon juice
1/4 ts Cinnamon
1 pn Ground cloves
2 tb Butter or margarine; melted
1/2 pk Frozen puff pastry sheets
Thawed (17 oz pk) Combine pistachios, honey, lemon juice, cinnamon and cloves. Unfold puff pastry; roll 1/8-inch thick into a 12" square. Cut pastry in half; brush with melted butter. Spread pistachio filling over 1/2 of each pastry length- wise; fold unspread half of pastry over filling, press down. Using sharp knife, cut into 3 x 3-3/4" strips. Twist strips; place on baking sheet. Bake at 350~ for 15-20 minutes, or until lightly browned. (Tops can be glazed or sprinkled with powdered sugar.) Makes approximately 24 twists. -----

Swedish Cardamom Pistachio Buns (step by step video recipe)
In Sweden, these buns are known as ‘kardemummabullar’. And These cardamom pistachio buns are really a must try in Sweden along with a cup of black coffee.
It has this fluffy unique flavor and the combination of sweet and cardamom is remarkably amazing. And these cardamom buns are very popular among ‘FIKA culture’ in Sweden.
Prep time: 40 minutes
Cook time: 30 minutes
Passive Time: 1-2 hours
Yield: 10 Servings

INGREDIENTS:
*To activate yeast:
-125ml warm Milk
-2 tbsp Honey
-7g dry yeast
*Dough:
-390g Flour
-2 eggs
-32g powdered milk
-1 tsp salt
-1 tsp ground cardamom
-75g cubed Butter- at room temperature
*The Cardamom Filling
-75g butter
-80g brown sugar
-2 tsp ground cardamom
*To Finish
-Egg wash (1 egg and splash of milk)
-Warm Honey
-Crushed pistachio

PREPARATION:
STEP 01:
1.Mix honey with warm milk. Sprinkle dry yeast and mix. Leave to activate.
2.Into a standing mixer bowl with the dough hook, add in all the dough ingredients except cubed butter, including yeast mixture. Mix to incorporate well and then knead for 10 minutes.
3.Add cubed butter 1 by 1 and mix well after each addition. Once finished, continue kneading for another 10 minutes. Form the dough in a ball and place in a greased bowl. Cover bowl tightly with cling film and leave until dough rises double its size.
STEP 02:
4.Into a standing mixer with the paddle hook, add in all the filling ingredients and mix until creamy. Set aside.
STEP 03:
5.Place risen dough on a lightly floured surface. Lightly press into a rectangle. Roll into a 14x21 inch (35x53 cm) rectangle.
6.Spread the filling evenly on the dough
7.Fold the dough into 1/3 by folding the left and right side of the dough to the center, overlapping each other. Twist the dough 90º towards you. Gently roll the dough into 9 inch (23 cm) height.
8.Cut into 2/3 inch (3.5 cm) strips. Cut each strips in half, leaving 1 inch uncut at one end.
9.Take 2 attached strips and gently pull on each end to make them slightly longer. Then twist them. Hold the uncut end between your 2 fingers and thumb and wrap the strips around them. Run the end of the strips between your 2 fingers and tuck the end.
10.Place in a baking sheet on a baking tray. Continue with the rest of the strips. Cover loosely with a cling film and leave for them to puff up a bit, around 20 minutes.
11.Brush with egg wash and bake in a preheated oven at 350ºF (175ºC) for 30 minutes or until golden brown and fully cooked.
12.Once removed from the oven, immediately brush the top with some warm honey and sprinkle some crushed pistachio.
Serve warm with some tea or your favorite coffee.

Ingredients :
Cookie Dough
• 2cups - 240g Flour
• 1cup - 225g Butter
• 1/4tsp - 1,5g Salt
• 3/4cup - 90g Powdered Sugar
• 1tsp - 2.5g Cardamom
• 1tsp - 2g Lemon Zest
• 3/4cup- 90g Pistachios
Topping
• 1cup - 200g Sugar
Instructions
•Making the dough
1. Preheat your oven to 350°F (175°C) and spread shelled pistachios in a single layer on a baking sheet.
2. Roast pistachios for 10-12 mins until golden brown & fragrant.
3. Use a hand mixer to combine flour, butter, salt, powdered sugar, cardamom, and lemon zest in a bowl.
4. If the mixture is too dry to come together, use your hands to knead it into a dough.
5 .Add chopped pistachios and mix them in by hand.
•Shaping the dough
1. Roll the dough into a cylinder that is about 5cm in diameter.
2. Sprinkle some sugar on your workspace and roll the cylinder in the sugar until it's fully coated.
3. Refrigerate the cylinder for 45 minutes until it is firm.
•Cutting and baking the cookies
1. Preheat your oven to 325F (160C).
2. Slice the cylinder into 5mm thick slices.
3. Place the slices on a baking sheet.
4. Bake for about 20 minutes, or until the cookies are golden brown.
5. Once done, let them —-cool down and then enjoy your delicious cardamom pistachio cookies!
