What's the BEST Falafel Recipe?
Falafels are a Middle Eastern specialty consisting of small, fried croquettes or balls made from chickpeas. Spices, onions, and parsley. They are commonly served as an appetizer or inside pita bread with garlic or tahini sauce. The best part about falafel is that they are simple to make.
Falafel ingredients and flavors will differ depending on what country you are in and who is making it. For example, in Egypt, fava beans are used instead of chickpeas. However, there are also Governorates in Lebanon that use a combination of both garbanzo beans and fava beans. I loved the flavors for this recipe using both beans, but you can use just 1 or the other if that is all you have access to.

Ingredients for this recipe:
• 1 ½ dry garbanzo beans
• 1 ½ dry shelled and split fava beans
• 1 medium-sized peeled and roughly chopped yellow onion
• 5 trimmed garlic cloves
• ½ bunch roughly chopped green onions, root end trimmed
• 1 medium-packed cup flat leaf Italian parsley leaves
• ½ medium-packed cup cilantro leaves
• 2 teaspoons ground cumin
• 1 teaspoon ground coriander
• 1 tablespoon sea salt
• ½ teaspoon ground black pepper
• neutral flavored oil for frying

Beetroot is a tasty, dark red taproot of the beet plant. The plant’s leaves are green with red veins. There are two type of variations of beetroot – namely summer and winter fruit. In winter, large, round beetroot is sold without the leaves while summer beetroot is sold from May to September. Summer beetroot is considerably smaller than winter beetroot and is often tied in bundles with the leaves still attached. The leafy portion of the beetroot is also delicious stir-fried, in a salad or in soup. The sweet, somewhat earthy flavour is appreciated by adults and children alike.
Other types of beetroot are now also finding their way to the shops. These include white, yellow and orange variations, and also Italian Chioggia beetroot. The Chioggia beetroot is a magnificently pink and white zoned root with a very sweet flavour. The yellow, orange and Chioggia beetroot varieties are best used raw to ensure that they retain their beautiful colour.
AVAILABILITY
Summer beetroot is normally available from May to September. Winter beetroot is sold from October to April. In March and April, beetroot is usually imported which means that it is largely available throughout the year. Cooked beetroot is also sold all year round.

Falafel is a deep-fried ball or patty made from ground chickpeas, fava beans, or both. Falafel is a traditional Middle Eastern food, commonly served in a pita, which acts as a pocket, or wrapped in a flatbread known as taboon; falafel also frequently refers to a wrapped sandwich that is prepared in this way.
These fried vegetarian fritters are often served along with hummus and tahini sauce (known as a “falafel plate.”) They’re also great served with toum, a Middle Eastern garlic sauce.
“The first known appearance of legume fritters (aka falafel) in the Middle East appears to be in Egypt, where they were made from dried white fava beans (ful nabed) and called tamiya/ta-amia (from the Arabic for ‘nourishment’); these fritters were a light green color inside. Many attribute tamiya to the Copts of Egypt, who practiced one of the earliest forms of Christianity. They believed that the original state of humankind was vegetarian and, therefore, mandated numerous days of eating only vegan food, including tamiya.”
INGREDIENTS
1 lb dry chickpeas (also known as garbanzo beans) - you must start with dry, do NOT substitute canned, they will not work!
1/2 tsp baking soda
1 small onion, roughly chopped
1/4 cup chopped fresh parsley
3-5 cloves garlic (I prefer roasted garlic cloves)
1 1/2 tbsp flour or chickpea flour
1 3/4 tsp salt
2 tsp cumin
1 tsp ground coriander
1/4 tsp black pepper
1/4 tsp cayenne pepper
Pinch of ground cardamom
1 tsp baking powder (optional - makes the falafel more fluffy)
Vegetable oil for frying - grapeseed, sunflower, avocado, canola, and peanut oils all work well
