How To make Tart Kebab Sauce
1/2 c Dates, pitted, chopped
1/2 c Raisins
2 T Cider vinegar
1 ts Salt
3 T Sugar
1/2 c Vegetable oil
1 ts Ginger, ground
Mix the ingredients together then put into a blender and `puree' them into a smooth mixture. Heat the mixture in a sauce pan until thoroughly heated. Use as a warm dipping sauce for kebabs. ORIGIN: Teo Burnazins, Hotel Ashkabad, Tashkent, Uzbekistan

Ingredients for 12 patties:
-240 gr (8 & 3/4 oz) cooked chickpeas
-240 gr (8 & 3/4 oz) cooked potato
-an onion
-a garlic
-a small piece of ginger
-3 tbsp olive oil
-black pepper
-1/2 tsp salt
-1/3 tsp cumin
-a bunch of parsley
For the yogurt sauce:
-1 cup vegan yogurt
-1 tbsp olive oil
-1 tsp lemon juice
-black pepper
-1/2 tsp salt

Meliz Cooks The BEST Turkish Restaurant-Style Chilli Sauce (Ezme)
This is my recipe for a super easy, Turkish style chilli sauce (Ezme). It’s THE BEST, and all you need are a few simple ingredients and a food processor.
Ingredients
1 400g can chopped tomatoes
2 tbsp Turkish sweet red pepper paste (tatlı biber salçası) OR tomato puree
1 tsp pomegranate molasses
1 tsp dried mint
1 small handful fresh flat leaf parsley
1 large / 2 small onions
2 cloves garlic (1 tsp)
2 tsp pul biber
1 red or green chilli
2 tbsp extra virgin olive oil
The Method
Add all the ingredients into a food processor, and blitz it to a consistency of your liking. Try it, and if you wish, feel free to add a pinch of salt.

Shredded Red Cabbage - Kebab Salad Recipe
Delicious shredded red cabbage in a lemon and olive oil salad dressing. Simple no-cook dressing to add to thinly sliced red cabbage, similar to Turkish kebab salad from takeaway shops in the UK.
Makes a flavoursome vegan or vegetarian side dish for many other Greek and Mediterranean dishes.
Shredded Red Cabbage Salad Ingredients
½ head - Red Cabbage
1-3 tbsp - Olive oil (mild or light) Do not use extra virgin/ virgin it will be too strong
1 large - Lemon freshly squeeze, should be about 3 tbsp
1 tsp - Salt
Optional -
1 tsp sugar add more/less to taste
