How To make Texas Tornado Pudding Cake
Cake: 2 c Flour
1 1/2 c Sugar
2 tb Cocoa
1 1/2 tb Baking powder
1/2 ts Salt
1 c Milk
1/2 c Margarine; melted
Topping: 2 c Brown sugar
6 tb Cocoa
3 1/4 c Hot water
Cake - mix flour, sugar, cocoa, baking powder, and salt together. Add milk and margarine to dry ingredients. Mix until smooth. Pour into 9" baking pan. Topping - mix sugar, cocoa, and water until sugar and cocoa dissolve. Pour over top of cake. Bake in 325~ for approximately 45 mins. or until done. -----

When you need something sweet this will work for you. Leave off the icing and this makes an excellent base for strawberry or blueberry short cake, just add whipped creamed and you've got a great homemade desert.
Here's the recipe:
1 stick of butter, softened (1/2 cup)
1 cup sugar
1 teaspoon vanilla extract
2 large eggs
1 1/4 cups sifted self-rising flour
1/2 cup buttermilk
Bake in 9x13 inch Pyrex pan in preheated 350 degree oven for 25-30 minutes
Icing:
4 tablespoons butter, clarified
1/4 cup buttermilk
1 3/4 - 2 cups confectionary sugar
1/2 teaspoon vanilla extract

Fruit Cocktail Cake
INGREDIENTS
Cake:
1 1/2 cups sugar
• 2 cups all-purpose flour
• 2 large eggs lightly beaten
• 2 teaspoons vanilla
• 2 teaspoons baking soda
• 3/4 teaspoon salt
• 1 can (16-ounce) fruit cocktail with syrup undrained
Topping:
• 1/2 cup butter
• 1/2 cup brown sugar firmly packed
• 1 cup sugar
• 1 cup evaporated milk
• 1 teaspoon vanilla
• 1 1/2 cups sweetened shredded coconut
• 3/4 cup pecans chopped
Garnish:
• ▢Reddi Wip
• ▢maraschino cherries
INSTRUCTIONS
Cake:
1. Adjust an oven rack to medium position. Preheat oven to 350 degrees. Spray a 9X13 inch baking dish with nonstick cooking spray.
2. In a large mixing bowl, stir together all cake ingredients until well combined. Pour into prepared baking dish and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Topping:
1. Meanwhile, make the topping by combining all the ingredients in a saucepan and bring to a boil over medium heat. Continue to boil, stirring constantly, for 2 minutes. Pour over hot cake and smooth evenly with an offset spatula.
Garnish:
1. Top individual slices of cake with a dollop of Reddi Wip and Maraschino cherries.

1 GERMAN CHOCOLATE CAKE MIX (PREPARE BATTER AS PER BOX DIRECTIONS)
1 STICK BUTTER (ROOM TEMPERATURE)
1-8 OZ. CREAM CHEESE (ROOM TEMPERATURE)
2 CUPS POWDERED SUGAR
1 1/2 CUPS FLAKED COCONUT
1 CUP CHOPPED PECANS
Preheat oven to 350 degrees. Prepare cake mix and set batter aside.
Combine butter, cream cheese, and sugar. Blend with an electric mixer until creamy.
Spray a 13x9x2” cake pan well with baking spray (or grease and flour). Sprinkle coconut evenly
across bottom of pan. Next,sprinkle nuts evenly over coconut. Pour cake batter over coconut and pecans. Drop cream cheese mixture over top of batter, using a tablespoon, in dollops evenly across top. Take your spatula and carefully run it through top of cake to marble cream cheese in a little. (NOT TOO MUCH or it will not make craters while baking)
Bake at 350 degrees for 1 hour. Take out and enjoy hot or cool

Earthquake Cake
Earthquake Cake is an amazingly moist cake that you cannot mess up! It doesn't require any skill with icing or decorating. Just put all the ingredients in your dish and enjoy! This is great to serve to your family or to take to a special occasion. Looking for a great dessert for Valentines Day? This would be delicious!
Earthquake Cake Recipe:
Ingredients:
1 ½ cups pecans
1 ½ cups sweetened coconut flakes
1 Box chocolate cake mix
1/3 cup oil
1 cup water
3 eggs
1 1/4 cups chocolate chips
½ tablespoon flour
1 teaspoon oil
1 block cream cheese
1 stick butter
3 cups powdered sugar
Preheat oven to 350 degrees.
Sprinkle 1 ½ cups of pecans and 1 ½ cups of sweetened coconut to the bottom of a 9 x 13 pan.
Follow a Chocolate Cake Mix according to its instructions (usually 3 eggs, 1 cup water, and 1/3 cup oil).
In a bowl, mix 1 ½ cups of chocolate chips with ½ tablespoon of flour and 1 teaspoon of oil. Pour half of this bowl into the chocolate cake mix.
Spread cake mix over the pecans and coconut.
In a separate bowl, mix 1 block of soft cream cheese with 1 stick of soft butter and 3 cups of powdered sugar. Add dollops of this mixture to the top of the cake mix. Sprinkle the rest of the chocolate chips across the cake.
Bake 40 minutes.
This is great warmed and served with ice cream!
