Today's a good day for an Irish Coffee! St. Patrick's Day is right around the corner, I could use some caffein, and it's chilly where I am - so a hot Irish coffee sounds pretty good. However, I know not all of you are somewhere cold, and you may not want a hot drink. Not to worry - we're also going to make a cold brew Irish coffee! For this version we'll be using Mr. Black Coffee Liqueur because its bold coffee flavor holds up to dilution. Hot or cold - if you like coffee and you like cocktails, there's an Irish coffee for you. Let’s Make An Irish Coffee

Foynes airbase in Limerick Ireland was the main hub where Pan Am used to fly their Flying Boats between America and Europe. In the video I say Air Force Base for some odd reason, but it was just an airbase, not sure that the Air Force had anything to do with it. HA HA. Anyway in 1942 a new restaurant opened there as it became a more major hub than originally intended and a young Irish Chef named Joe Sheridan took over the menu. Legend has it that one winter night a flight left Foynes bound for Newfoundland and then on to New York, after battling the storm to no avail the pilot decided to turn back to Foynes. This was uncommon and the restaurant was informed to make the crew and passengers food. So it was on this night that Sheridan decided on a whim to mix up what would become the first Irish coffee: A little brown sugar, a nice pour of whiskey, topped of with coffee and cream floated on top. Legend has it that one of the American passengers exclaimed: Sir, this is delicious! Is it a Brazilian coffee? to which Sheridan famously replied No, It's an Irish Coffee. And thus the Irish Coffee was born and made into a regular component of the menu at Foynes. I don't know how true the above is, but it is the story and it's as good a story about a cocktail as ever has been told!
That's only half the story though because it the Irish Coffee may never have garnered international acclaim if it wasn't for an American journalist named Stanton Delaplane who happened to have the drink at Foynes. He loved the drink so much he brought the recipe over to a barman named Jack Koeppler at The Buena Vista Cafe. It was here that the Irish Coffee was made into an international hit, and a lot of the reason people think this drink originated (and in a way it did) in San Francisco. The glassware traditional to this drink, the Georgian Punch Glass which we are using here was decided at the Buena Vista as was the presentation. In practice, when I serve these at the bar, I'm using a slightly bigger glass with about an ounce more coffee, but for National Irish Coffee day I thought we should stick to tradition! INGREDIENTS:
- 4 oz hot coffee
- 2 oz Irish whiskey
- 2 oz heavy cream
- 1 tsp dark brown sugar or demerara syrup
DIRECTIONS
1. Heat treat the glass with hot water. This is simply adding hot water to the cocktail glass so that it does not leach heat from the cocktail.
2. Prepare your hot coffee.
3. Whip some heavy cream so that it begins to thicken - to the point where it can stay as a drop on your finger. We don't want whipped cream, but we also dont want straight cream - we want somewhere in between.
4. Empty the hot water from the glass.
5. Add the sugar or syrup to the glass and add about an ounce of hot coffee. Then, using a bar spoon, stir until the sugar has dissolved into the coffee.
6. Add the whiskey.
7. Continue to add coffee until you have a gap about an 1/2.5 cm from the top, stirring as you go.
8. Add the cream to the top by means of a squeeze bottle, or by pouring it over the back of a spoon so that it slowly pours into the top of the cocktail.
9. Serve and enjoy!
