How To make Three Cheese Chicken Breasts In Tomato Sauce
1/4 cup olive oil
6 skinless boneless chicken breast halves
1/2 large onion
chopped
2 large garlic cloves :
chopped
1 tablespoon dried oregano
15 ounces tomato sauce canned
14 1/2 ounces Italian style stewed tomatoes
1/3 cup dry white wine
2 bay leaves
8 ounces penne pasta :
cooked
1 cup mozzarella cheese grated
1/3 cup asiago Cheese :
grated
1/3 cup grated parmesan cheese
Prehat oven to 375?F. Butter 13x9x2 inch glass baking dish. Heat oil in heavy large skilet over high heat. Season chicken with salt and pepper. Add chicken to skillet; saute until outside is white, about 1 minute per side. Transfer to plate. Add onion, garlic, and oregano to skillet and saute until onion begins to soften, about 4 minutes. Add tomato sauce, stewed tomatoes with their juices, wine, and bay leaves and cook until sauce thickens, breaking up tomatoes with spoon, about 8 minutes; discard bay leaves. Line prepared dish with penne. Arrange chicken over. Spoon sauce over, covering chicken and pasta completely. Mix cheeses in small bowl. Sprinkle cheeses over sauce. Bake until chicken is just cooked through and sauce bubbles, about 20 minutes.

Marinara Sauce
1 tbsp olive oil
1 onion peeled and finely diced
1 clove garlic minced
14 oz (400g) passata
1 tsp dried oregano
1 tsp sugar
Parmesan Crusted Chicken:
2 large chicken breasts
2 eggs
3 tbsp plain (all purpose) flour
1 1/2 cups (75g) panko breadcrumbs
1 tsp paprika (optional - but gives the breaded chicken a lovely rich colour)
1/4 tsp salt
1/4 tsp black pepper
3/4 cup (75g) finely grated parmesan cheese
2 tbsp olive oil
1 ball (4.4oz or 125g) mozzarella sliced
1/4 tsp dried oregano
To Serve:
cooked spaghetti
2 tbsp sliced fresh basil

Stuffed Three Cheese Chicken
Chef Frank shows you how to make delicious three cheese chicken with a homemade red sauce.
INGREDIENTS....2 portions
2 medium chicken breast
1/3 c chopped yellow onion
1/3 c chopped celery
1/3 chopped carrot
2 tsp salt (used twice)
1 tsp black pepper
3 15.5 oz can of peeled Roma tomato (any tomato will do, Roma is best.
1 c all purpose flour
2 TBSP fresh mozzarella
2 TBSP goat cheese
1/4 c + 2 TBSP extra virgin olive oil
1/4 c torn basil leaves
Red Sauce
1. Combine celery, carrots, onion and olive oil in food processor or blender and purée.
2. Purée tomato
3. Cook the Sofrito on med low heat for 15 minutes.
4. Add tomato purée and add 1 tsp salt and 1/2 tsp black pepper.
5. Cover and simmer for 60-90 minutes. Stir regularly.
6. Simmer uncovered for another 30 minutes.
7. Remove from heat and add basil.
Chicken
1. Trim, clean and butterfly the chicken breast.
2. Combine flour with1tsp salt and 1/2 tsp black pepper.
3. Coat chicken thoroughly with flour mixture.
4. Heat 2 TBSP olive and and 1 TBSP butter in sautéed pan.
5. Sautéed chicken until done about 3 minutes per side.
6. Put a layer of tomato on the bottom of a casserole dish.
7. Put chicken on top of sauce and then fill with mozzarella and goat cheese.
8. Bake 5 minutes in 350 oven for 5 minutes or until cheese melts.
9. Top of with more sauce and Parmigiano-Reggiano.

Cheesy Chicken Breast in Tomato Sauce - Easy & Yummy!
Ingredients:
1. Chicken Breast Pieces 7-8 medium
2. Tomato Sauce (Dolmio Bolognese Original) 500g
3. White/Lasagne Sauce 250g
4. Salt to taste
5. Red Chilli Powder to taste
6. Black Pepper Powder to taste
7. Oregano (just a pinch)
8. Mixed Herbs (just a pinch)
9. Medium Grated Cheddar 250g (grated)
Recipe:
Pour 500g of tomato sauce into a pan on medium flame. Add salt, red chilli powder, black pepper powder and chicken breast pieces into the pan. Cover the pan for 15 mins to sauté. Pour the chicken breasts into a foil tray. Pour 250g of white sauce in another pan. Add 100g of milk and simmer for 10 mins. Now pour the white sauce onto chicken breasts in the foil tray. Spread 200g of grated medium cheddar evenly. Sprinkle medium herbs and put it in the pre-heated oven for 10-15 mins. Take the tray out from oven and cover it with foil and let it stand for 5 mins. Voilà delicious cheesy chicken breasts are ready. Serve with your own choice of sides.
