How To make Tomato & Green Pepper Salad, Fez Style
3 ea Green bell peppers
4 lg Tomatoes
1 ea Garlic clove, crushed
1 pn Sweet paprika
1/4 ts Cumin
2 tb Olive oil
1 tb Lemon juice
1/2 ts Salt
1/4 ts Black pepper
1/4 ea Preserved lemon, see recipe
Prepare peppers by grilling them in a 450F oven or holding them over a gas flame until the skins are evenly charred. Place in a towel & set aside to cool. When cool, slip off the skins, core & seed. Cut into small pieces & set aside. Skin the toamtoes & cut out the core. Slice each tomato in half crosswise & squeeze gently to remove the seeds. Cut the flesh into small pieces. Mix peppers & tomatoes in a glass serving dish & add all remaining ingredients except the preserved lemon. Mix well. Rinse preserved lemon under running water & cut away the pulp. Cut the peel into cubes & sprinkle over the salad. Serve cool.

Backyard Pickled Peppers
When that spring garden keeps on peppering, don’t let them spices go! I combine all of these different peppers in a tangy spicy brine to make pickled peppers that’s better than any of those grocery store jars. I put these on everything and there a huge hit!!!!
Ingredients
• 12 lb. various peppers. Use what you want depending on the heat level you want
• 2 yellow onions thin sliced
• 20 cloves garlic thin sliced
• 3/4 gallon of vinegar
• 4 cps water
• 6 0z. Container of whole mustard seeds
• 2 cups dried red bell pepper flakes
• 1-1/2 cups pickling salt
Directions
1. Wash and clean peppers. Sanitize jars and lids per manufacturer recommendations.
2. Slice or prepare peppers how you like. I did some where I left certain peppers whole and some I sliced all the way up. Have fun with it!
3. Mix onions and garlic with peppers and add to jars. Leave some room at top.
4. Bring vinegar and water to a simmer and add seasonings and salt. Simmer 7 minutes.
5. Pour hot mixture over peppers and make sure liquid is past the peppers.
6. Seal them up and follow your favorite canning process.

Recipe:
INGREDIENTS
2-3 cucumbers (depending on size), peeled and thinly sliced
1/2 onion, thinly sliced or chopped ( use 1/2 onion if large, whole onion if medium size)
2-3 tablespoons white vinegar
2 tablespoon white sugar
Salt to taste
1/2 - 1 cup sour cream (depends on how much you like, start with 1/2 add more if you want)
2 tablespoons dill, chopped ( adjust depending on how much dill you like)
NOTE: As with all recipes, you need to make this your own. Sometimes I want more creamy, sometimes more bitter, sometimes with lots more dill. This recipe is just a starting point. You need to make it several times, adjust the proportions and make it the way you like it.
METHOD
Peel cucumbers and then slice thinly.
Hint: use a mandolin slicer for consistent size.
Salt cucumbers to draw out moisture, place in colander let moisture drain, 15 min
Place sliced cucumber and onion in a bowl
Add vinegar and sugar
Add salt to taste, sour cream and dill.
Mix well
Enjoy!
