yolk batter:
1 c Melted butter; (no s
-ubstitute) 1/3 c Corn oil
2 c Sugar
12 lg Egg yolks
yeast batter:
1 c Warm water
1 1/2 tb Yeast; quick acting
1 1/4 c All-purpose flour
flour batter:
1/3 c Evaporated milk
3 c All-purpose flour; (3 to 4)
2 ts Anise seeds; toasted
1 ts Anise extract
Recipe by: "Marisol L. Verallo" <marisol@DURIAN.USC.EDU.PH> Beat the egg yolks.Mix with the first 3 ingredients. Set aside. Add the yeast to the warm water. Let rise for 1 minute. Put in flour. Set aside. Mix the yolk batter with the yeast batter. Gradually beat in remaining flour and milk. Add anise seeds and extract. Continue beating until elastic and pour in small mold pans lined with parchment paper until double in bulk. Bake in preheated 350F oven until golden brown. Brush with melted butter and sprinkle with grated cheese and sugar. Important: Gradually add the remaining flour to the rest of the ingredients. Upon reaching 3 cups, if your batter will already be a little stiff (but not dry, then it's enough.) Sometimes the size of the yolks matter. -----

2 1/2 LBS Carne Ranchera (or flap steak)
black pepper

1 egg
2 advocados
mix cheese
lettuce
Bone Marrow

FOR THE TORTA
Telera Pan / French Sub Rolls
TORTA ASSEMBLY
- Slice french sub rolls in half and butter both sides
- Place sub rolls on griddle and toast each side
-Add the guacamole
- Then add sliced meat and sautéd onion on top of cheese
-Add lettuce tomatoe
- Now remove both sides of bread from griddle and start adding desired condiments

Ingredients
1/2kilo 3rd class four/ APF
400g or 2cups washed sugar
3 1/2 tbsp. Baking powder
1/2tsp. Salt
370ml.Evap milk or water
3pcs. Large egg
1tbsp. Vanilla
3/4 cup coconut oil
Mix all the ingredients
Bake for pre heated oven 200C'
Bake for 20-25mins or until golden brown
Check w/ toothpick
Note. In 15mins na bake nyo xa ng 200c' ang init once na Makita nyo na pumutok na ung ibabaw nya wait nyo ng 3mins then low the heat for 180c' hangang sa maluto na xa para d masunog ang inyong torta....

2 large eggs
1 cup margarine (130 grams)
500 grams light brown sugar (2 and 1/2 cups)
1 tsp. salt (6 grams)
200 ml. milk
400 ml. water
750 grams all purpose flour
1 cup powdered milk
1 and 1/2 tsp. baking soda
3 tsp. baking powder

Torta Cebuana
This is one of the often requested recipes by my students and followers. I have many versions of the Torta Cebuana. This version is not the same one that I teach in my face to face classes but this is still very good.
Torta Cebuana also called Torta Mamon is a muffin like cake (could be spongy or dense) traditionally made with tuba (fermented coconut wine) instead of yeast. Anise is used for flavoring instead of vanilla. Instead of butter, it used pork lard and don't forget lots of egg yolks! According to research, Torta Cebuana originated in Argao, which is in the southern part of the province of Cebu.
In the Philippines, there are two kinds of torta. In the northern part of the Philippines, torta is an egg omelet with meat and/or vegetables formed into a patty. In the southern part, specifically in the Visayas, it is a small cake made with eggyolks, tuba and pork lard. Since the Torta Cebuana is high in fat, do not be surprised if the torta is crumbly.
In my modern version of the Torta Cebuano, I used butter for flavor and I used corn oil instead of pork lard for a healthier choice. My recipe of Torta Cebuano freezes very well. You wrap each torta well in cellophane or plastic. Put in a sealed container and freeze. You can just heat it in the microwave.
And by the way, using pork lard instead of oil or butter helped to prolong the shelf life of the torta during the olden days. Just thought you should know. Enjoy this recipe. A truly Cebuano classic!
